Thats how we have been starting on a windsurfer for over 40 years, when short boards, sinkers came around in the early 80s that was the only way to get up on the board. That would be hard to do with a big wing board. Larry
If you're on a high volume board, it does help to place your back foot closer to the leeward rail to force the board to role flat. It will be tough with a wider board otherwise.

Would a surfboard-foil board like Cabrinha cutlass that is used for kite foiling be eventually ok to get on and wing foil after you get experience? Maybe with a big wing like 7 m for a 95 kg guy, that is able to kite foil and also wing foil on a large board?

The video series would be even better if it had higher information density. Condense it to about 50 % of the original duration and it would be perfect.
Been doing this one for over a year. Boards under 65l, wings 6.0 and smaller. Some wings work better then others. The ones that hold the power like the Ensis are easier. Check the video on my channel 👍

It can work, but you will need a lot of wind. Not ideal, As that has a very low volume, I believe the biggest cutlass board has 26L.
Would you need to go up in wing size in order to pull this off? Compared to a stinkbug knee start. And compared to a squat sinker?
