Slow Weekend On The Farm

- This past week we’ve all felt a little under the weather, so over the weekend I was determined to bring order back to my home. As Moms, we have a huge weight of pressure on our shoulders to keep everything running smoothly. So when we are down and out, things can spiral out of control pretty quickly. Laundry piles up, dishes accumulate, meals become sparse; As much as the rest of the family tries, they just aren’t Mom.
It turned out to be a beautiful weekend and we were thrilled to spend some time out in the sunshine.
Lemon Bars by Ina Garten
Crust:
½ pound unsalted butter, room temp.
½ cup sugar (I use rapadura)
2 cups flour
1/8 tsp salt
Filling:
7 eggs, room temp
3 cups sugar
2 TB grated lemon zest
1 cup freshly squeezed lemon juice
1 cup flour
Confectioner’s sugar for dusting (I omitted)
-Preheat oven to 350* F.
-For the crust, cream together the butter and sugar until light and fluffy. Combine the flour and salt and slowly add the butter mixture until just incorporated. Press mixture onto bottom of pan. I lined the pan with parchment paper for easy cleanup.
-Bake the crust for 15-20min, until very lightly browned. Let cool.
-for the filling, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30-35 min, until the filling is set. Let cool to room temperature and then place in fridge for 2 hours before serving.
Dust with confectioners’ sugar (optional)

I bought an electric pressure canner for the exact same reason. It's either too hot or too cold/windy outside to keep a constant eye on my pressure canner when using our Camp Chef 3 burner. I even have a hard time with my water bath canner even, on my glass top stove. I find that my stove top burners do not just heat constantly at the level to which I them dialed. The infra-red heat comes and goes so my heat is not consistent. DRIVES ME CRAZY. I can't wait to get a propane stove in my house. I have switched to doing my water bath canning out in our 5th wheel which actually has a really big kitchen, which is a nice option. I use my electric pressure canner for the pressure canning though. You will really like it. It doesn't have the capacity to do as many jars as your regular one, probably, but it is so nice. Enjoy it mamma! You deserve it.

Oh that’s fantastic! Sometimes we just need to mix things up a bit. Last week I changed up the recipe to make it a carrot cake baked oatmeal. I thought it was amazing but my kids were thrown off bc if was not baked oatmeal OR carrot cake, but a combo 🤣
Hi Leigh! Chelsea at Little Mountain Ranch pressure cans on her glass top stove. She has even begun using two at one time, lol! She says she is just very careful to place the canners on there gently. I have not done this, so use this info with caution.
Also, I love natural sugar, and even though the color was not as bright, I am sure the natural sugar gave the bars extra flavor. 😊🍋

If you have not checked with the manufacturer of your stove or Google University (lol) do so. I have been canning on my glass top stove for over 25 years without a problem. Works great!!!! Hope you are feeling better. I love the videos.

Hope y’all feel better soon! I have a glass top stove. I have used my pressure canner on it forever sometimes I have 2 going on it. But I also have the electric one and love it too. Just can’t can a big amount. I have the presto canners.

My last oven actually exploded while I was cooking on it and I was very pregnant. I have a healthy fear/respect for electric stoves 🤣
I use my presto canner on my flat top stove all the time no problems!

Please tell me what that big silver thing is you got something to drink out of? I saw another RUclipsr have the same thing and I'm so curious to know what it is?
It is a Berkey water filter. We fill the top portion up with water from our sink, and then the water goes through filters into the bottom portion. Even though we are on a well and don’t have to worry about fluoride or chlorine I still want to take precautions on other issues that might be lurking in our water(such as pesticides and coliform)
Would diatomaceous earth help the lice?
It might give it a try. I do have a bunch of it in a can. With our chicken mites, years ago, it didn't work. However, neem oil did do the trick.
