Blueberry Streusel Coffee Cake

French Onion Soup
Ingredients
3 tablespoon butter
3 pounds sliced onions
salt to taste
1 bay leaf
4 stems thyme
2 cloves garlic minced
1 /2 cup sherry
4 cup chicken stock
4 cup beef broth
1 tablespoon better than beef bullion
1 baguette cut into 1/2 inch slices
4 ounce shredded swiss/gruyere cheese
Directions
Sauté onions in butter until very caramelized. Season with salt, bay leaf, thyme and garlic. Deglaze pan with sherry. Add chicken stock and beef broth and bullion base. Simmer for 30 minutes. Place bread on sheet tray; cover with cheese and place in 350 degree oven; bake until cheese melts. To serve place soup in bowl and place cheese bread on top.
Ground Beef Tacos
Ingredients
-2 pound lean ground beef
-2 packets Taco Seasoning
-1 teaspoon guajillo chili powder
-1/2 cup water
- oil for frying
-24 corn tortillas
-1 head iceburg lettuce shredded
-1 pound colby jack cheese shredded
-2 roma tomatoes, diced
-1 cup sour cream
Directions
Brown ground beef in skillet; seasoning with taco seasoning and guajillo chili powder. Add water; bring to simmer; reduce heat to low and simmer for 15 minutes. In separate skillet, heat a half inch of oil. Place corn tortilla in hot oil for 20 seconds on each side; remove to plate. Once tortillas are cool enough to handle, fill with a heaping tablespoon of ground meat mixture; fold tortilla in half and place in skillet with hot oil. Cook until crispy on each side; remove taco from oil with tongs draining off any excess oil. Fill taco shell with shredded lettuce, sour cream, shredded cheese, and tomato. Serve with restaurant style salsa.
Restaurant Salsa
Ingredients
-14 1/2 oz can diced tomatoes
-1/2 onion
-1 jalapeno
-1 large garlic clove
-1/2 teaspoon salt
-handful cilantro
-juice of 1 lime
-1/8th teaspoon Guajillo chili powder
Directions
Place juice from canned tomatoes in blender along with onion, jalapeno, garlic, salt, lime juice, and guajillo powder; blend for 20-30 seconds. Add reserved diced tomatoes and cilantro to blender and pulse a few times to desired consistently. Refrigerate before serving.

Your channel provides me with something i dont find in ANY other place. Ive missed it. While you were dealing with your own trials, i lost my parents and 2 other close family members. I cannot begin to describe how much your videos take me to a peaceful place that has not been so easy this past year. My 2 year old grandson with autism was having a meltdown and when the ending song with the beautiful snow calmed him immediately!! We watched that portion at least 10 times! Thank you! ❤️

I am so happy to have found your channel a few months ago! I have driven through snow like this here in Oregon and it is so peaceful! Just loved the calm music and your drive in the snow and Cooper playing in the snow! We have an all white Husky and she loves the snow! That blueberry coffee cake is perfect for a snow day! We make tacos like the ones you made, but also make Mexican street tacos! They are both so delicious! In all my years, I have never tried French onion soup, but yours looked amazing and now I have to make it!

Made baked oatmeal with blueberries yesterday. Great now I have to bake a coffee cake 😉. We got a whole trace amount of snow in SE Oklahoma and school closed. We would be paralyzed with that snow. Glad you are back. Thanks for the inspiration ‼️

I get very confused when i see American recupes for coffee cake...in Ireland a coffee cake has coffee in it or at very least coffee flavour 🤔. Love this recipe!

Nothing like fresh OJ, I do OJ and grapefruit with lemon in it, so very good. ❤ I love your videos, I have been a sub for about 4 years now and you have inspired me to meal plan and also buying/freezing and organizing my pantry and actually rotating my pantry out. @@TheQueensCabinet I have had good and bad times. David has passed 4 years today and sadly my brother passed 2 years ago, he was 53. So as you can guess some days are hard. I now work part time only which I love as it gives me time to take it easy. I have been trying a healthier lifestyle and have lost nearly 6 stone. No diets just the intermittent fasting which works for me. I have been over to Houston to my son 4 times since the travel ban was lifted. He purchased a beautiful home up near the Woodlands and I have been assisting with interior design. I found a wonderful consignment store near him and we have purchased some great deals in quality furniture. I love shopping and as you may guess I have gone mad. I have been praying for you and your family. I hope Ken and the boys are well. Your son who has heath issues I hope is doing well and his foot issues have healed. You are looking well and I was glad to hear that you are feeling a lot improved. It is so lovely to watch your videos again, you have been greatly missed but be easy on yourself and don’t feel obliged to do too much. I just can’t imagine the pressure of recording and uploading. I will be watching take care and lots of love. Steph xx

I haven't made this in about 10 years. I use Blackberries as I can forage them in my area. (Picking season is in about 2 weeks). My recipe is slightly different as it uses yeast, and therefore not as fast as yours. Thank you for the reminder.

Don't believe I have ever had deep fried tacos. I always just heat my taco shells up one at a time directly on the fire of my gas stove.
