    When I married I did not pick out fine chine or silver plated flatware. I've picked Oneida stainless flatware & I still love it. My pattern has long been discontinued but I found used sets on ebay. It's cleaned in the dishwasher & survived 44 years of real living.

    I have an 90+ year old silverplate set that I adore. (Yes, I handwash but it takes maybe an extra minute a day? And I *maybe* polish once a year. They are surprisingly durable & get used for EVERYTHING everyday.) Very comfortable in the hand & very pretty. PLUS(!!!) they were designed with a bunch of specialty things. You haven't lived until you've set a table with luncheon forks & knives, stirred tea with a 5 o'clock spoon, or eaten pie with a pastry fork. There are ~10 different spoons per place setting (which, yes, is quite a silly number) & at least half a dozen each of forks & knives.
    Basic setting pieces are common online & if bought in lots from people clearing out their attics old silverplate is comparable in price to most stainless.

    • @Max-hq2jm
      @Max-hq2jm 6 месяцев назад

      I agree! The old silver plate sets knock it out of the park for me for the same reasons...I have a set from 1910 that I bought at an estate sale for $70, service for 12, with luncheon forks, cream soup and regular soup spoons, etc. They are very well balanced, smooth edges, and look glorious... polishing? I only have to do quarterly at most. They go in the dishwasher (mustn't let them rub against stainless), and set a beautiful table. I have only ever eaten with silver plate (Mom's influence), and there are folks who believe eating with silver is healthier...I don't know, but I love the history and practicality of this set. And sooo much less expensive in $$ and conservation of resources.

    Another minor issue that I learned the hard way, and it doesn't sound like they considered in their testing, is that knives are also used for spreading condiments. The flatware that I otherwise love has very stylized, triangular knife-blades ( wide at the base and narrow at the tip ), which makes it very difficult to use them to put butter on my toast or mustard on my sandwiches. Just something else to think about before you commit to buying a set, that didn't cross my mind until I actually experienced it first hand.

    • @ABCEggplant
      @ABCEggplant 6 месяцев назад

      I've switched to just using the back of a spoon for this. So much more control, more space to spread, and a more comfortable grip! It it in a jar? Scoop it out, then spread it with the back. Butter, peanut butter, jelly, anything!

My old USA Oneida in the Community quality set has been used daily and washed in the dishwasher for decades and still looks beautiful. It's plenty heavy enough and is well balanced. Unfortunately it's a discontinued pattern but many of their old Community and Heirloom patterns are still available in 18/10 stainless, You just have to find them. They make several different quality and price levels so read the product info. i recently added to my old USA Oneida Marquette pattern and I'm pleased with the Vietnam 18/10 quality so far.
    Liberty Tabletop bought Oneida's old NY factory and they are the only current USA maker of flatware. Most of theirs is VERY expensive and the pattern selection is not all that great, imo, unless you like the very plain patterns. You can order three sample pieces for $10 including shipping. I've ordered six but haven't received them yet. I don't really like the patterns, though. They need to work on their designs. Apparently their quality is top notch, but you'll pay for Made in USA..

    In our house we have and enjoy our eclectic mish-mash of mixed flatware collected over the years. We never really felt the need to live by a single style or look and simply added new pieces as needed.
    We've long figured that spoons would inevitably be lost at school or work, or older pieces broke from misuse or were terribly bent out of whack by kids, and so we'd buy whatever we thought looked nice or felt comfortable along the way.

    I really wish someone would find an electroplating technique that would actually survive years of dishwasher use, so you could get brass colored or black colored utensils, but it looks like only silver works

    • @Paelorian
      @Paelorian 6 месяцев назад +2

      The problem isn't the technique, it's that the outer plating is so thin that the metal just wears off, especially with a soft metal like gold. Steel and silver flatware aren't plated, they're solid metal. You could use glass or copper utensils. Or titanium or aluminum, which can be anodized for a durable coating of different colors, or other metals. Or plastic, but I wouldn't choose plastic.
      Other than decoration, aesthetics, and form, the choice of material should be determined by practical concerns like weight, ease of cleaning/hygiene, durability, taste (many materials affect the taste of food), and the antimicrobial self-cleaning ability of some metals (by the ogliodynamic effect), most famously silver.
      I've always wanted a gold-plated spoon and fork for my own use. Expense aside, gold is an ideal material: unlike silver or steel, it's completely tasteless. Unlike steel, it's also mildly antimicrobial. But gold is soft and will wear, so I'd have to gently hand-wash every time and even anything covered in gold leaf or electroplating that I'm regularly washing with a sponge is going to remove the gold eventually.

    Growing up we lived near Oneida where the Oneida flatware was actually made. I think (and may very well be wrong) that it is now made in Vietnam

    • @abc-wv4in
      @abc-wv4in 4 месяца назад

      Their top lines are now made in Vietnam and it is still high quality 18/10 stainless, not crap made in China. Oneida sells several different quality and price levels; you have to find their top lines which are available in some of the old USA Oneida patterns. I recently added to my old Marquette pattern and I'm pleased with the new pieces so far.

      A micro-serrated knife can spread butter too, though. If one can do both, and the other can only do one, then the more versatile has an obvious advantage. They're looking at sets. One set has more useful tools that do more jobs. The other may require you to buy other utensils. It's less complete.

    • @seikibrian8641
      @seikibrian8641 6 месяцев назад +11

      A dinner knife or "place knife" is not a butter knife, it's an all-purpose knife, so being able to cut meat is important. As Adam says, though, if you eat a lot of steak, having dedicated steak knives is also good. An actual butter knife is a smaller knife that goes on the butter dish, or on the bread & butter plate if you have enough of them for each place setting. To be really precise, there is also a difference between a butter knife and a butter spreader, but few sets offer both, so they're most-often used interchangeably. (High-end settings may also offer a dedicated fish knife and fish fork, and even an oyster fork. In times past, there were also ice cream spoons/forks, which were essentially fancy sporks. We mostly use fewer items for more foods nowadays.)

    • @EvanScangas
      @EvanScangas 6 месяцев назад +2

      @philobrain flip that around, an actual steak knife can also spread butter, but you also don't need to apply undue force to cut through a meat. Many sets have matching steak knives, I'd just make sure the knife was available before investing in 8-12 settings. I'd also see what other items were available for the set. It's like purchasing pans, it's an investment that can last a really long time, so showing 2 knives both working poorly wasn't a big selling point for me.

      @@zoiks6631, America's Test Kitchen paid affiliate links are to the online companies which sell the products, typically Amazon, but also department stores such as Dillard's and cookware retailers like Crate and Barrel. They don't even have advertisements on their website or in their magazines, though they do have corporate sponsors for their PBS series.

    Just a personal observation... I noticed when Julia was cutting the pieces of meat that she used a "sawing" motion to cut them. Many years ago, in fact decades ago, my Grandfather taught me when cutting steaks, or any meat, to draw the knife across the meat and then raise the knife up from the surface of the meat and return the knife to the beginning of the cut and repeat the "drawing" motion. He also told me that if it takes more than three draws (cuts) across the meat that the meat is not cooked correctly. Since then I vary rarely ever use a "steak knife" to cut my steaks, it just isn't needed. As a side note: whenever I go into a restaurant and the server ask me if I want a steak knife I tell them "If I can't cut the steak with a table knife, then the steak isn't cooked correctly." I've gotten more than a few strange looks when I tell that. :-)
