I usually like to cook like this right after a workout while the caffeine is still in me and my blood is pumping. By the time you sit down and finish eating it’s time for a nice nap.

Have never seen broccoli rabe at any of the grocery stores where I shop, but I wanted to try this. So I used broccolini. I also couldn't find peppadew peppers, so just used some pickled fire roasted ones. Honestly one of the best things ever. VERY easy, very quick and very forgiving and riffable. I don't know about the adding water bit, it makes the final product a bit too watery for me, and the second time I added no water, just kept the vegetables moving until they released their own water and it seemed to be just fine.

I didn't know about Cabot cheese as a west coaster. But we got Tillamook. Yet to have anything better!
Having lived on both coasts I can say those two brands are the best
You just need a better cheese market. I'm in CO and have abundant access to both of those brands and so much more at cheese shops in the area.

dish looks really amazing, but we dont have good cheese here in Pakistan since its not a part of our cuisine, we import cheeses tho but they are too expensive. Few local companies are producing cheese now but they are only working on mozarella, cheddar and "pizza" cheese :D

Wow, at 2:40 the whole, "I'm so guilty about eating beef" routine was sort of silly. If it's "great and luxurious" why do you only have it "once in a blue moon?" Go ahead and eat steak folks. It's okay.
Because there is a major environmental impact to consuming beef. If everyone (especially Americans and Australians who consume 80+ kgs of beef per citizen/per year) reduces their wants, and eats it as a special occassion meat, the world will be a better place.
