Enchiladas Estilo El Grullo Jalisco Familia Torres

On my family trip to El Grullo Jalisco October of 2022 the Torres Tribe got together to make Enchiladas. These aren't your typical rolled up enchiladas like they make them everywhere else, these are made to fold like tacos. I am not sure if they're made that way only in El Grullo, but that is the only place that I've ever had them that way.
