I can't believe how excited I am about mayonnaise! I have spent HOURS trying different recipes, 1 egg, 2 yolks, mustard, vinegar, lemon juice, you name it I tried it today. Then as I was about to throw my whisk out of the window, I saw your video. It worked!!! Everything else I tried came out thin and watery, yours was perfect! Thank you. No more store bought for me.

The lemon juice actually is added for the main reason to "cook" the egg by use of the acid, so the egg is completely fine for those that are raw egg phobics

I just whipped some up using this recipe, but substitutiing the olive oil for canola and it turned out perfectly smooth and thick.Yummmm and thank you.

Thank you BEC , I'm gluten and dairy intolerant, I have been looking for a good mayo recipe to compliment my tuna,and turkey/chicken salad without the eggs. I just tried your recipe, instead of the egg, I used 2tabs.flax meal and 4 tabs.of water
I whipped all of the ingredients up in my bullet and it turned out fantastic, my turkey salad was delicious, can't wait to try it with my tuna. Peace-N-Blessings.

Hello BEC, I made this recipe and it was awesome: a tasty and healthy mayonnaise. I used Savora Mustard which is a stronger yellow mustard - it added a nice spicy feel to the mayo. Thank you for sharing!
Hi Jonathan, I am glad that it worked out for you. You can make a lot of changes to this mayonnaise, to make it your own. Another good thing to add to the mayonnaise is roasted garlic. Ran out of mayo for sandwiches at the house threw a double batch of this together but had to use canola oil . Still turned out amazing. Eggs came from my own chickens too. I do have a question how long does this stuff last? I ended up with way more than I anticipated. Never planning on buying Mayo again.

Thank you for this receipt, I use my blender and it work great. I did try 5 times in my nutribullet and it did not work, the problem and the key is to add the oil while the blender is running, so if you are using a nutribullet for example it wont work, because you will need to stop it in order to put the oil inside.
Hi Mike, Yes, you are correct, you can make the mayonnaise in a blender, as long as you keep it running, you can also make it in a bowl using a whisked, as long as you keep beating as you add the oil. i have just made the mayonnaise but, i added a table spoon of horseradish and a pinch of cayenne pepper. and i replaced the lemons with lime for a zestier taste.

Hi Cris, you can use other oils, just be sure that you like the taste of those oils, as they will change the flavor of the mayonnaise. The only homemade one I'll eat is Julia Child's cooked egg mayonnaise. Otherwise, the only commercial mayo we use is Best Foods/Hellman's brand.
Why use dijon mustard compared to using regular yellow mustard? Too strong? Is mustard generally the main ingredient in mayonnaise?
Hi Jon, I use the dijon for the flavor, it adds a nice subtle flavor to the mayonnaise. You could try using yellow mustard, it would add a different flavor, a stronger flavor, to the mayonnaise. The main ingredient in mayonnaise, is the oil. Good luck, The BEC

I find this super, but is there any substitute for mustard .

How long should you blend the mayonnaise? I have a small food processor and the motor over heated and stopped.....it's semi fluffy but not like yours is in the video. I tried using my blender for another recipe and that didn't work at all. Suggestions?
Annette PM Hi Annette, Try using your blender, you want to add the oil in slowly, a little at a time with the blender running it the highest setting. Adding the oil slowly allows for the oil to have air whipped into it, this is what makes the mayonnaise thick and creamy. If the mayonnaise isn't getting thick, try adding another egg to the mayonnaise, then add the oil slowly with the blender running on high speed. Just wondering, can you make it without mustard at all, or is it used as an emulsifier? Will it separate & fall apart without it? I'm trying to make a home made version of Hellman's mayo, and I can't recall it having a mustard flavor to it.
Just made it with the mustard in it & liked it, but it turned out a little runny. Would appreciate any suggestions on how to improve the texture :)

i make it with blender...it work. but when i put it in frigh and take it out to room temperature it split@broken.. iven if i put it on a hot burger ..it melt like wate@oil...why is that

Try taking it out of the fridge, and putting it back in the blender, and adding a little more oil, to see if you can get it to whip up again, also add a little mustard. I'm highly allergic to citrus fruit and can't use the lemon juice. I found out some years ago that there are plenty more out there like me. I've noticed in my research some add vinegar instead of the lemon juice. What say you?

oh, might be, anyway I made a perfect use of it as a hair mask, worked brilliantly, so you advice people who fail like me to follow me lol,
in culinary school they use egg yolk only... one yolk would need about one cup oil give or take... we had to whisk by hand also.. good exercise making mayonnaise by hand whisking..

I made this twice with extra virgin olive oil, and it just doesn't become creamy even after 3 or 4 minutes of whipping in my food processor. It remains a slightly creamy liquid, but nothing like the nice mayo in the video. Is there a reason extra virgin olive oil might not work chemically?.. I did add the oil very slowly.
BelleDiamond Hi Belle, I am sorry to hear about your failure. If it isn't getting thick, you can try adding another egg, or just the egg yolk. The extra virgin oil should work just fine, as this is the oil that I use. Any liquid oil will work. Just remember to add the oil slowly, it sounds like this is what you did, so try running the food processor longer, don't rush it. Can the Mayo be made with vinegar instead of lemon juice?

sir, why my mayonnaise turn out quite watery( didn't thicken ) .. is't because im using palm oil..? or because im using hand mixer to whisk it..?
Hi Mine, I think it sounds like you didn't mix it long enough with your hand mixer, remember you are mixing in air to make your mayonnaise thick, so mixing fast and long enough to thicken your mayonnaise is the trick. Also if your mayonnaise will not become thick, try adding an egg yolk to the mayonnaise. Palm oil will work fine. I am sorry to hear that you had a failure, good luck next time. The BEC
