This is an amazing recipe. I started making it a couple years ago when I first saw Scott post it. The only thing I change is that I use thighs instead of breasts because chicken breasts dry out a bit too much for my taste in a slow cooker and the difference in calories low. Definitely a winner!
Made this today and it was delicious! Used boneless chicken thighs instead and had some leftover Greek yogurt that I stirred through before serving. Clean plates all round
I like to marinade and brown the chicken in some red curry paste to richen the peanut satay, and add a can of coconut milk or cream. Makes it very tasty
Hey lovely, can I make this dish without a slow cooker? If so, could you please explain in which temperature should I cook and for how long, really wanted to try this dish but not sure if I will be successful because of this detail. Really appreciate your time and work!

I agree - thighs are way more succulent. I add a can of coconut cream too

Tried this tonight. It was okay but it was missing depth if flavour for me. Next time I try it I’ll add some more ingredients to build on the flavour.

For this I used "pearl river" it's what they use in Chinese takeaways and you can get it in Chinese food shops. It's like syrup!!
