Fileting chicken is the single biggest difference maker for getting chicken that is fully cooked without being dried out! Remember that our grandmas weren’t fileting their chicken breast, but they were also half the size. Selective breeding means modern chickens are just huge compared to what old recipes call for. Don’t be scared of the knife! It’s as easy as Julia makes it look!

I was taught to cook from scratch but I was also taught to appreciate a simple, easy recipe. Neuro diversity means that sometimes I need both in my meal plan. The creamy garlic pasta chicken is inspiring! I always like to double my batches so I can cook once and we eat twice! To the stir fry, I would add some pineapple :)
