She was the perfect archetype to introduce in the sequel. Every main character in the first movie was either awkward, sarcastic or sardonic. Throwing in someone who's all bubbly and genuinely nice just opened the door up for so many hilarious character interactions.
Its funny she calls him Paul Blart. The first Zombieland movie came out in '09, same as Paul Blart, so if thats when the apocalypse happens that might have been the last movie people saw before the world ended

The power supply for the freezer would usually be near the compressor so most likely on the roof or ceiling crawlspace so no fault on not finding it. They are also have thick insulated walls and a good door so no noise or smells would escape. She is also scavenging away from her place.
