You can make them a week in advance, but just pack them well individually (i use a heat sealer) to keep them fresh. I also freeze cookies if I'm working on a big project. Use a freezer quality bag or container. I freeze once the icing is fully dry (18-24 hours after the 1st flood). Then when I bring them out of the freezer, I let them rest for 4 hours and come to room temp. The avoids any condensation forming in the cookie bag and reduces any color bleeding.
