Ok so I get the concept but no one explains the direction you're working when doing this method. Are you basically working from left to right instead of the right to left we're all used to. When you're done, the beginning slip knot will be to the left, correct?

Yes, I guess you could say left to right since you are making the chain and the first row of stitches at the same time.
