1- Sin is used , because it represent sinusoidal wave shape. Cos function also can be used. Tan can not be used as tan function will not give sinusoidal wave shape. In complex calculations , cos and sin both are used to show various components of vector / Phaser. 2- Three phase supply and 3 phase motors are designed considering anti clock plane of vector as per standard practice. Clock wise vector rotation is used but for unbalance in 3 phase supply and also flux rotation in traction in some cases.
