I think it looks like leather with the embossed flowers and red brown fondant . Maybe an old book cake can be made with that technique.

Cakes reused for practice and demonstrations are best known as Frankencakes. Coined as far as I'm aware by a well known baker, I believe Ester Holt. I could be wrong on that though.

Why don’t you use styropor dummies if it is just for demonstration purpose? So you do not have to use real cake or waste food!? Just an idea….😊
I used to do that, but I spent so much time chasing it around my turntable;) lol I like to have the weight of the cake.
