I am French. I think Korean don't know how to make baguettes. Your dough is not smooth because you added too much flour, so when you work with the dough, it will reduce the hydration index. Our French chef of the bakery will add little water, all the dough to made the baguette will be very smooth and pretty. I have been eating baguette all my life, I know good baguette when I see it.

Absolument 100% raison. Le pire c'est que beaucoup pensent que c'est la vraie recette de la baguette.
