Can you use a circular saw with brand new blade doing the same process going in a few mil then going again to cut it fully off instead off the plunge saw.
You can yes, but the plunge saw takes alot stress out of it.

How do you manage to keep the little gap between the bottom of the vertical centre panels and the bit you inserted?
When I cut the bottom rail I keep the gap on it so when it's refitted it looks exactly the same.
