Sweat dripping off of people's faces, fingers repeatedly dipped into sauces to taste. Michelin restaurants seem have rather unsanitary practices.
It adds to the flavour, a certain "je ne sais quoi"
Also, the heat probably burns off the bacteria. But considering how famous groin and ass eating is in that hemisphere, I personally wouldn't care
