As someone on a budget do you think its possible to get by without c stands and use light stands for clamping scrims to bounce light and other diffusion materials etc?
Absolutely, 100% It might be a bit more tricky but use whatever you can find within your budget.
Are you going to do a video on retouching? I mean you take a few pictures, but after that what is your process to make a kick-ass and professional picture out of the raw files? A picture the customer buys at the end...? Keep it up!

You really should use a remote shutter release, makes it so much easier

As someone who want's to get into product photography how essential would it be to invest in external flashes? I have some modern LED's but was wondering how big a difference it would make with the flashes. I'm just starting out so trying not to obsess over equipment.
I never recommend using LED lights for product/still life photo cuz: 1. They are not powerful enough 2. Hard to modify the light.
They can work if you use only big light source for food photography and similar.
I would start with 2 used cheap flashes like Elinchrom or Godox.
