Pro-Tip: Put Butter/Oil on the fish skin itself before placing on the grill. Or you can use a paper towel soaked in your grill lube of choice on the grill prior to placing the fish on the grill. The flat iron does work though, looked a lil burned on this one.
Thanks for the tips. The skin was burned, the meat was not. I leave the skin on to protect the meat and keep the fats and juices in. It works great. The meat was wonderful and not at all burned when the skin was removed. Some folks eat the skin and scales, I do not.
