There's a longer video where the founder of the studio played the game live on stage and he gave some more info on the game. He said that it's not much of a Souls like but there are some influences, difficult gameplay isn't one of them but he did say that they tuned the difficulty to easy for the live demo and there's definitely some challenge in the final game.
They said the souls inspiration was in the muti layer map design

Right. So by looking at this game you can so tell this is mainly Chinese martial arts. I can see this heavily inspired by a lot of Chinese kung fu

This combat is exactly like Dragon Age 4’s gameplay. Just way better and faster and more combos. Dragon Age’s wushu is basically slow motion compared to this ☝️
