Sir I would like to share a funny incident revolving around this Gatte curry, during my marriage talks my relatives were invited to my husband's place and they were served Gatte curry along with other dishes, they got fooled thinking it was some non vegetarian dish which tasted amazing. 🤣
Rajasthani dishes Gatta Curry and Pitod Curry, and Maharashtrian "Patvadi Rassa" are my favorites. The three of them are almost similar but not quite. We lightly shallow-fry gattas to maintain their shape. Also, add a pinch of crushed Fennel Seeds (Saunf) when adding dry Masalas. It adds a robust aromatic flavor. I am also pleased to see you use Ghee for Baghar/Tadka. The rule of thumb is, use Ghee, and not oil, for dishes containing Curds. Some regional variations use Tomatoes instead of Curds but IMHO that version is less than satisfying.

I am a rajasthani and I love gatta. Once my friend and her husband went to a 5 star restaurant and next day came to my place for lunch .. and I cooked this gatta and her husband was like -"5 star k restaurant s b jyada achi dish h ye" and that made my day 😊

Patore ka raita, made with besan. First get the paste made on gas. Than spread on thali like burfi spread. Cut in small Barfi shape after getting set. Than make cold hung curd raita, add very small soft cut coriander stems, dahi vada masala, and patore . You can thin the hung curd with cold water.
Being south indians from coastal region, our diet is mainly non vegetarian..but thanks to RUclips , we have fallen in love with vegetarian cuisine especially north Indian..so when I saw your notification yesterday for gatta curry I was explaining to my husband about Rajasthani cuisine ,like their dishes include dal n dahi as key ingredients etc..and also told him gatta is like sausages made from besan and can be used in different ways similar to sausages..lol.
My most favourite Besan dish is Khandvi , your recipe ... thank you Chef for such authentic and mouthwatering recipes and you keep them so simple & easy to make... 🙂

Hi kunal..my mom makes गोदड़े ki sabzi..which is I think the haryanvi version of gatta curry. Although curd is not added in गोदड़े. The besan is kneaded and cut in smaller size and fried. Then curry is prepared and गोदड़े added into it. I simply love it. ❤️. My mouth is watering just writing about it 😋.

Namashkar Chef, Being GUJARATI my favorite dish made from besan is Mohanthal, Vanela Ganthiya and Khandvi. Our most famous Kathiyavadi curry Dhokdi nu Shaak is more or less same as Gatta Curry. Key ingredients are almost same and mainly this same Gravy is made for preparing dhokdi nu Shaak. But the procedure of making Gatta and dhokdi with besan is little bit different from each other.
