- Ted's Restaurant in Meriden, Connecticut is famous for their Steamed Cheeseburgers. In this video I try and recreate this iconic regional burger and I think I did it justice. This burger was amazingly good! Could this be the real "Steamed Hams" from the Simpsons? If you want make a good, and very easy burger, try making a steamed cheeseburger. You'll be glad you did!

I’ve sat at the counter at Ted’s many, many times over the last 20+ years and watched them cook these to perfection. For the record, Ted’s uses a Wisconsin Cheddar. Not too sharp, but a mild white cheddar. If you really want the full experience, you order a side of home fries with cheese. It’s magnificent.

Best video I've seen on this subject. Well done ! I'm a Connecticut guy and really like these burgers, and have some
suggestions : first, I like a couple of grinds of black pepper on the finished burger. I also prefer a grilled roll. If you ask
for that and they grumble, around the Meriden area you'll find a place that will accommodate you. They all have grilles.
Or, do it at home, otherwise, because if you're not in Central Ct., you're outta luck.
The cheddar they use around here is pretty sharp, with a slightly "grainy" texture. I could do without that, but prefer it
'cuz it's just what I'm used to. Also its OK to just melt the cheese in the microwave if room in the steamer is an issue.

That turned out better than what I was expecting when you described it to me the other day. I could see how that would be a hearty "stick to your ribs" burger on a cold CT day...plus easy to make inside during New England winters.

You can steam beef in a bamboo, Asian style steamer. Burger patties, meatballs, pastrami, corned beef...... You get tender, juicy meat. The steam melts off the fat.
Even though I have lived my entire 67 years in CT I have always preferred my burgers grilled over charcoal. However, you did a great job replicating the steamed cheeseburger in all it's glory. I may have to grab one at Ted's today. Nice job.

I’ve seen a video of Teds and yours look spot on. Funny how it seems strange at first but looks sooo good at the end. Greg you sure steam a good ham lol. You’d make superintendent Chalmers proud lol.

Something to consider, you lost all your water to steam because you had the small gap. If you had been able to seal that, the steam would not have escaped, which would've kept heat and water in the container longer, and it could've also increased the temperature of the steam in the vessel to cook it faster, which also saves you water.

Perfectly executed - thank you for doing us in CT proud! You steam a good ham. I always figured that the oversized Kaiser roll was the bun of choice because it's sturdy enough to stand up to all the juices from the steamed burger & cheese.

I enjoyed watching your video. Thanks for sharing. I’m originally from Connecticut. 10 miles from Meriden. I ate at Teds many times over the years. My hometown has a diner that makes amazing steamed cheeseburgers as well. Now living in Florida I was craving steamed cheeseburgers. So I bought a steamed cheeseburger cabinet and trays from a guy in Meriden who makes them BURG’R TEND’R. I use 5oz of beef and white cheddar cheese and kieser rolls. Topped with onion and ketchup. I steamed the beef for 20 minutes and the cheese for 10 minutes. Yum!

My Grandmother then mother made these for me since I was little. We are from KY and never visited NH.
Could be a bulkie roll given that it's Connecticut. (basically unsweetened kaiser roll from New England)

My gosh, that burger is a cheese lover's dream come true. I've often thought of making a burger with extreme melted cheese atop it and with the weather warming up here in Chicago I'm going to make it happen. It looked excellent although I do love a tomato on mine and would opt out of the onions. Just a preference.
never been a hamburger guy my wife loves them, but I can honestly say that steamed burgers are absolutely incredible and totally worth the 6 hour drive from where I live in NY every few months when I get a craving for a burger

You are spot on Greg, I have made these before and they are tasty. I want to say I used white American cheese. I also used a counter top Black and Decker steamer.

i have one of the home model burg'r tend'r cabinets that holds 10 trays, your setup is just as good and don't worry about the pouring spouts on the pan releasing too much steam, you're good as long as the water keeps boiling. the cabinets also release steam, they don't have fancy seals or anything. traditionally they don't season the meat before cooking but that doesn't mean you can't, i personally use seasoning salt and pepper in the tray before i put in the meat and i sprinkle more on top too. i've found that aged white cheddar doesn't separate as much as a fresh cheddar, by aged i mean it's marked on the package that it has been aged at least 12 months. french bread or hard rolls are an acceptable substitute for kaiser or vienna rolls.
I did see a video on one of those travel channels that did put the bun on a flat top to grill it a few minutes

I've had the same problem with the pouring "mouth" thing so I just stuff a bit of wet paper towel in there to seal it off works a treat.
I'm surprised it's as good as you say. I figured it was probably an acquired taste.
Have you ever been to Cherry Cricket in Denver? It's been featured on a lot of cooking shows. Excellent burgers. They do a lot of unique combos like peanut butter, cheese, egg and bacon. I'd love to see you replicate it. They definitely use seasoning but I think it's fairly simple.

I agree about the patty size and probably prefer a lightly toasted bun but other than that looks great.
The lid of your pan has holes on one portion of the rim to aid in draining water from whatever you’ve cooked. If you rotate the lid so that those holes aren’t line up with the spout, you’ll loose less water through evaporation while steaming.
Hey Greg, I made this with a regular ringmold on a small flat plate. Resolved the "meatless parts of the bun" -problem. Raclette is approximated with 'ruck' (a sound as in truck/chuck) - let . Rucklet.
R in the throat if you want to be closer to the original. No equivalent sound in the English language.
What about Wisconsin Brick Cheese, for the cheese?

I first heard and saw video of this place from a documentary called Burger America from like 2004(?) and I always wanted to go there and try it.

They use the best cheddar cheese in the country from the Granville store. In Granville Massachusetts. You can order it on line. The best steamed cb is done on a pedestal steamer. Multiple jets on top of a cast iron pedestal. Done in 5 seconds. This is at the Lunchbox . & Kay's. Meridien and the Morning scramble in Middletown. The bun is a hard roll with purified butter on a flat top. Lunch box is fast moving. Lettuce, tomato, onion. Out.. condiments are in the little packs. Morning scramble is sit down. But you still get it fast. And they have Malt's

I eat at Ted's often. I'm like you, the meat and cheese is the star. I only add lettuce, pickle, salt and pepper. Theo K. is right, you MUST have the home fries with that decadent steamed Wisconsin cheddar.
I have had Teds probably 200 times. I I walked past it every day for years! The cheese is a cheddar but the company makes it special for them. They have exclusive rights to it. We will never get it
Great video. I've wanted to try a steamed cheeseburger since watching a feature on Ted's Restaurant on the Food Channel (unfortunately, I can't recall the show). It's good to learn how to prepare them at home, but I'm curious if "special" equipment is truly necessary? It would be helpful to know about any suitable alternatives.

Great video! Ted's is awesome, I live about 15 minutes away, but throughout the summer, I'll hit that place up several times. They even have a food truck that will show up at festivals and events. Two requests, both CT and New England related, Louis Lunch (the birthplace of the hamburger as we know it) - ground steak, tomato, on bread, no ketchup because they whine like babies in the restaurant about it. The other request is something I hadn't seen until I'll I moved here, lots of restaurants in New England will server a bug ass burger with lobster on top. It's awesome, not sure if it has a name, but it works way better than you think it would. Cheers!

I've always wanted to try this burger since I saw a video of TEDs, manly for curiosity because I really don't know what to expecto haha great video I think in TEDs they use a kaiser role to be able to hold up to all the juices and water, is it possible to have a BK stacker copycat video? Sup Greg, great classic, I never found the trays, but go to Ted's a couple times a month since was little kid, my uncle lived down the road, now my brother and family, I was told by grandfather it started with a provelone? Then changed, about 40 years going. I didn't notice, but back then was just called white cheddar, now they make all kinds, still love them, have a few steamers, wish had trays, 🤔 just thought could I use a ramekin? I went to Ted’s a few years ago. Wasn’t too impressed. The burger is moist, but basically tasteless. While your setup wasn’t the exact same, it was a good facsimile. The burger looked spot on.

I live in Meriden and the best part of Teds is the cheese. Its resturaunt secret and man its delicious. I guess its some sort of vermont cheddar but not exactly. YOu did a great job with the burger. Looks good.
Im from the area as well and the best part about Teds is finding out Kevin Lamay used to work thre and finding out he makes a way better burger then Teds . For anyone reading this the 2 restaurants Teds and Klamays are only 5 minutes or so away from 1 another and Klamays has walls full of awards dont waste your time with Teds its a disappointment after having a Klamays burger

@@mr.nobody9697 i think Klamays cheese is awesome and the rest of their ingredients are top notch. I also love crispy well done fries and if i ask the guys to make them crispy they will. I feel their fries are nearly as important as their burger. I would give it another try. Look at all the awards on the wall too and see they just aren't from the Record Journal but rather from all over the country. So Teds may be the original Klamays has a superior product

Taste like art is subjective so their cheese may be better which is fine i just prefer teds cheese but thats the only thing i give teds over Klamays. Other than that its not as good. I eat Klamays from time to time its not like i ate there once.
A white American cheese will not separate, but I see someone suggested a white cheddar.
I tried it and enjoyed it. But if I had to choose, I'd definitely prefer the chew and taste of a smash burger. Nice change of pace though.
I am a burger connoisseur. I have been eyeballing videos of Ted's for a year now. Ted;s is just over an hour drive from me here in Auburn MA. I have not made the trip yet but it is on my bucket list. You rendition of Ted's burger looked pretty yummy but I want to go straight to the source and try it for real. Oh yes....I will be going soon!
Do yourself a favor and skip Teds and go to Klamays which is also in Meriden. Kevin Lemay used to work for Teds a long time ago and then he went into business for himself and he is the true king of Meriden steamed cheeseburgers. KLAMAYS has walls full of awards from all of the state and country. Its worth the ride but not for Teds
@@yeahbuddy8983 I wish you posted this a month ago. I took the trip to Ted's last month. The burger was dry and very bland. I was expecting a wow factor yummy experience and was disappointed. Teds wasn't horrible but I would not make another 2 hour round trip to eat there again. It just was not that great. I really thought it was going to be delectable and delicious and it was not. I have KLAMAYS in my sights for another steamed burger road trip. I'll let you know what I think!

I have seen this before an I don't know how I feel about it, I have had steam burgers before and I did not enjoy it at all. I think a burger needs that char and maillard reaction. That my opinion anyway, awesome cook Greg!!
Lived in Meriden for 35 years. Ate at Ted's, The Lunchbox and K. Lamay's. All great. A little different from each other but all have the different flavor you get with the steamed burger. At Ted's they will pour the juice (fat) right on the burger if you want. Steamed food sounds bland but these burgers are anything but!!!
My money was on raclette or fondue cheese, spot on, great recipe
Btw, i also don't salt the burgers but mostly because I'm usually on a frenzy 😅

The pan lid wasn't aligned correctly to hold the steam in. You have to turn the lid so the holes in the lid rim, aren't lined up with the pouring spouts of the pan. :-)

You had about 1/2 ounce too little meat and a full ounce more of cheese. Should be 5 1/2 and 2. That's why yours turned into a big goo-ball of cheese.

The real Ted’s restaurant is extremely small. It’s like 4 tables in a building the size of a truck trailer. At least that’s what it felt like 13 years ago. That was the surprise because TV made the place look bigger.
