I literally almost bought some brats last weekend. But stopped and thought, naa I'm gunna make my own . Been making my own sausage after seeing brads previous videos.

My brother and I made about 36 of these last night and smoke them in the grill and they turned out amazing your chosen seasoning blend does amazing at keeping my stomach mellow when normal bratwurst have a tendency to give me heartburn

I made this recipe over the weekend and I must say you knocked it out of the park Bradley! Wow everyone loved them the flavors were spot on!
I have made these twice, but added jalapeno and cheddar. 1st time they turned out fantastic, but the 2nd time I use pickled jalapeno instead of fresh jalapeno and it made the meat not bind. I will be making these a lot from now on, Thanks Chud!

Just whipped up a small batch of bratwurst with this recipe (used half and half instead of cream). I fried up a patty from the stuff left over in the stuffer this morning for breakfast--awesome stuff!!! Thanks, Brad, for such a great channel--I have made a lot of your recipes and have never been disappointed!
Just mixed a batch and had to sub in fennel for caraway and nutmeg for mace. I used a carrot fiber binder. It was delicious and they were juicy snap through bites. The flavor was spot on. Thanks for sharing and teaching. Great recipe. 😊

@@ChudsBbq ya I think I have had my smoker (pellets, give me a break I’m new,lol) for maybe a month or so and have done chicken wings, brisket, pork ribs, steak, chicken thighs and maybe one or two others. Tonight i am going to try some pork belly burnt ends and chicken wings and probably a brisket tomorrow. I love all of it. Excited to try some sausage like your video and I just watched your turkey breast video, which I had no interest in doing turkey, and now I can’t wait to try turkey breast.

I made these but I added pink salt and cold smoked them. Turned out super yummy. I'll be making them again before long. I've also made andouille and kielbasa sausage using your recipes. Always great. Never a bad sausage. Next I'm gonna make my own breakfast sausage to use in gravy and biscuits...

Just made a batch of these. Used my stand mixer as my grinder/stuffer. Grinding was slow, but not too bad. However, stuffing the casings was very challenging and not fun at all! I now have a Hakka sausage stuffer on order. Thanks for all of the videos.

I tried this recipe, and while I only so far have tried a patty made from the sausage mix, I have to say it was fanTASTEic. Although I had to sub dill for carraway since I forget to get carraway...so I have no idea if the dill is the reason why it tastes different from what I think of when I think of bratwurst. However, they tasted fantastic and had a unique flavor profile. Looking forward to cooking em up today!

A shout-out to the meat-grinder attachment on the Kitchenaid stand mixer. I had one already when I first started with Bradley's tutelage and couldn't see paying for a dedicated grinder. I did spring for the dedicated stuffer. I got the model Bradley used early-on -- I wish I got the model he uses today. I can't evaluate the KitchenAid stuffer other than to say I think hand-cranking is better for stuffing. Making sausage is so satisfying, although it does take time and prep.

Perfect. Another great video Bradley. Awesome job as always. I know it is more satisfying to make your own Bratwurst. Found a Brat that I really liked the taste of. Got lucky to this point and my wife was able to talk to the Meat Cutter at this local grocery store and I can order and he will grind and package the bratwurst in bulk (10 lb) how ever I want it seasoned and I can freeze it. Just had some for lunch today.

I watched your video of 5 master ingredients to make sausage and you added cure #1, but still later cooked the sausages on the grill. In this recipe you grill them at the end too, so I guess it's really preference if you want to add cure or not?

Carnitas for breakfast!
Pork butt bone in. Smoke it up with the end product of carnitas in mind. Next morning have some taco fixings ready to go. Eggs your way, then build some breakfast tacos. I have one kid that prefers an over easy egg on top and another that likes a bed of scrambled eggs on the bottom. Both ways are excellent. Put your spin on it! Can’t wait to see what you come up with.

I plan on trying some of these recipes in the coming weeks. My only concern is the mustard powder. I absolutely loath mustard. Even the smell makes me nauseous. Can you tasted the mustard powder at all or does it just blend in with the overall flavor. Anything substitutions you recommend. Your videos are the best. Thanks.
Question about cooking the brats in beer first. All the flavor is on the inside of the casing, right? So wouldn't any flavor added by the beer and onions be lost when you cook the brats over the heat?

What can you substitute for the milk powder?

Got a meat grinder and nat hog casings and did my 1st batch of sausage a few weeks ago BUT i use what i had which was a marinaded garlic/pepper pork tenderloin and a pound of bacon. Came out good but really strong on the garlic.
This time I made some pressure cooked pulled pork and with bone in shoulder so I chunked off the "good pieces" and really trimmed out around the bone and got my 2/12 lbs that im gona use for my brats on my next batch.
I dont know long hog casings last but had to buy em on amazon, soaked the whole 25ft last time which i didnt use hardly any so i packed em with salt and a bit of water.
I hope they're still good and that's why im in a rush to make more sausage before they go bad. Not sure how easily hog casings are to find in store and i don't want to have to buy online all the time if theres a way to preserve them for later dates. All i get is that you can get 1-2 years when properly stored but i dont know if that refers to unopened vacuum sealed etc.
If I ever saw brats like that in store I wouldn't make my own haha

Just curious as I don’t see freeze the grinder parts and just the meat. Do you see any problems grinding? I have the exact same stuff and gonna try it without freezing the parts and just the meat only.
