Ingredients for 5-6 servings:
2 lbs = 900 gr large frozen peeled and deveined shrimps.
Marinate shrimp, then keep cold in the refrigerator.
1/2 tsp = 2 gr kosher
2 tsp = 4 gr onion powder
2 Tbsp = 16 gr rice flour
1 1/2 lbs = 650 gr yam/ sweet potato
5 cup cold water
1 tsp kosher salt
1 Tbsp vinegar
Washed lettuce and fresh herbs.

Mixture of flours :
1 1/2 cup then removed 1 Tbsp = 160 gr rice flour
2/3 cup = 100 gr All purpose flour
1/2 cup + 1 Tbsp = 80 gr corn starch
2 Tbsp = 18 gr glutinous rice flour
1/2 tsp = 3 gr kosher salt
1/2 tsp = 1 gr turmeric powder
1 tsp = 5 gr sugar
1 1/2 tsp = 5 gr double acting baking powder.
2 cup cold water = 460 gr
Vegetable oil for frying.

Hi! Chi beth em muon hoi chi co biet lam banh chao nuong kg. Em va ma em thich them an banh chao. Nhung kg biet mua o dau va lai em cung o cach xa khu little saigon 1:30 min drive. Neu chi biet lam chi cho em nhe.
My sweet potatoes always get soggy and burns easily when i deep fry them. Do you have any tips on what I should do so that this won’t happen?
Hi Beth. How long does the fritter stay crunchy? Mine is really crunchy right after fry but loses it crunchiness not long afterward. I didn't add all the water in ( 1/8 cup left because I see the batter is rather thin). Do you think that might be the reason? Consider your ratio of rice flour vs other flour, ( as compared to other recipes that I came by - not stay crunchy for long either)I would think the fritter stay a lot crunchy for a longer period of time. Or do you think that is just the nature of fry food?
Can I refrigerate this afterwards or keep it at room temperature?

This shrimp and sweet potatoes are best combination, but you can use this batter for any other vegetable that you like, shrimp and chicken strips. Sorry, I’m not sure about make this gluten free yet.

Will it turn soggy when cold?

It may not have the same crunchiness as when it fresh fried, but no it doesn’t turn soggy.
