I had these in my garden and ripped one open and it was all white like a dense dry sponge, a week or so later I went back to them and they were full of dusty spores so I think you are right that they may change over time. I'm no expert though

Puffballs are an informal grouping of many different genera and species of mushroom. Generally it just refers to any round, spherical mushroom that is pure white when its young, and has its flesh turn to spores at maturity that are released through a navel in the top of the fruit. When the flesh is firm and pure white inside it is still edible. There's also earthballs, which are poisonous always. They look like puffballs but are black in the center, stay firmer throughout their life, and don't have the opening at the top of the mushroom at maturity.
The black one is not a puffball. It's called an earthball and is very poisonous, good thing you didn't eat it. Only it if it is pure white inside like a marshmallow, would it be an edible puffball.
@@dustinb1275 more than likely it's a pigskin earthball if it's black inside. I found some near a rotting telephone pole just slightly hidden underneath the ground. The white puffballs are mostly all edible tho. Just make sure they look like bread inside.

Puff balls turn into their own spores as they decay . Maybe that is why the second is all mushy

Not all puff balls are edible. But yes only the white ones.
the 2nd is called gem studded...it's all white when good...i just found one that looks like a dinner roll! grey inside...not good likely

Yellow when you scratch it means deadly or at least sickness for 2 days
I found lots all mushy & like maybe grey. They did not seem usable idk but some the spore dust was released.
They're too far gone if the spores are releasing. Also be careful to not breath the spores.

If you didn't know for sure on sedible verses non edible you shouldn't have wasted our time. Should have not been on here.

I found an onion earthball just a few days ago.@@dustinb1275
