I'm working on arugurumi. Do you have a technique that hides the new row of color change? I don't like how it looks like the first stitch is below by one row afar as the vertical aspect. I hope this question is not confusing.
My favourite is to switch colours with two loops on the hook (as in the vid) and then do a slip stitch instead of a single crochet after the change. You can also do two slip stitches. There are loads of other options ("jobless join" or working in rounds instead of spiral), but for me not worth the additional effort.

What do you do with the loose end of gray? Does it need a knot? I feel like it would all pull out if it got caught,
