What Happens at an AAMP Convention (Part 3)

One of the highlights of an AAMP convention is the ACMC -- the American Cured Meat Championships. Processors from across the country bring their best bacon, sausages, jerky, ham, snack sticks, and other cured meat items. It is a fierce but friendly competition, and if you finish in one of the top four places in a given category, you can take home a well-deserved award. Of course, the best overall entry wins the prestigious Clarence Knebel Best of Show Award.
