This recipe is fairly simple as you only need to make 1 layer of santan and blue pea flower extract in the agar agar mixture. When it is cooling down, the santan will slowly separate and float up, creating 2 layers as can be seen in the photos.

@@ShiokmanEddie I wonder if you'd consider recipes for lemongrass agar agar, or an agar agar with gula melaka coconut on one layer and pandan on the other (like the bengawan solo kueh). Would be interesting!! 😅
Yes I've tried making those before on a trial basis. Maybe next time when I'm more free then I'll make videos for those. As it is I've many request for other dishes and Kueh. I'll keep your request in mind. Thanks.

Most beautiful.

Nice recipe❤

how do u dry up the flower? sundried/dehydrator/oven? wash them before drying?
I don't, bought them already dried. Store in the fridge in zip lock bags.
Masya Alloh cantik banget
hi can i use agar agar strip instead of powder,,and is it just one packet enough.thank you.pearly
Sorry, I've never try using agar agar strips so I'm not sure.
Hi Eddie,
Your recipes are great and well-explained. I bought the pea flowers especially to try out this recipe. How easy was it to remove the kueh from the mould? I am afraid to break it!
Thank you Claire 😊 what you can do is to clear the sides all round with a thin spatula. Insert toothpicks at least 3 locations in between the sides of the agar agar and your mould, so that it will create tiny gaps at these places. These gaps will prevent the agar agar from sticking back to the mould. Overturn mould on to a plate and slowly shake until it pops out. The other way is to soak the mould in warm water for awhile and then overturn and it should slide out.
Thank you for your prompt answer! I will try this on Saturday for my family :)
You're welcome. Another thing to note is for the separation of the santan layer to occur is to leave the agar agar to cool long enough before chilling. This is to ensure that the santan will float thus creating the 2 layers effect. Also use bigger moulds and don't move or disturb the mould during the cooling process. Oh ya, after adding the santan to the agar agar mixture don't boil too long. Hope it will turn out well for you.
Do you mean that once we mixed all ingredients together and boil them, we should remove from the fire and wait until it is at the room temperature before putting in the fridge?
By the way, for how long can we keep this kueh? 1 day, 2 days?
Yes after adding the santan, boil for a little while and then remove from flame. Then transfer to your moulds, leave it at room temperature untouched for the santan layer to slowly float up before putting in fridge. In the fridge this agar agar can be kept for at least a week if not longer. By the way it's not a kueh :-)
Not sure if this suggestion is helpful for I have seen some videos that to remove the bubbles simply use a toothpick to burst them.
Thank you. Yes you can do that too if there are only few and larger bubbles.
Wow super 👍👍👍👍👍
Thank you
💜💜💜 great
Thank you
i have a fresh blue pea flowers, is it okay to use on thus recipe?
Yes it's ok
I would love to try this with gelatin and condensed milk...will it come the same way ? Or is it because of coconut milk
I've not tried with condensed milk so I'm not sure
Hi Eddie, when we leave it to set, the separation should have occur even before we put inside the fridge ?
Yes you should totally leave it untouched and it should slowly separate. Any movement will affect the separation. Also if the mould is small, the agar agar will set before it has time to separate. Better to use a big mould or glass bowl.
Thank you so much ! Appreciate it ... will retry again ....
I have butterfly pea in my garden..
May I know why my blue pea layer is SO thin....about half an inch only after separation from the coconut agar agar.
Most likely the santan is too concentrated. Try diluting it in your next try
I am allso like this but i cant find agra agra powder.pls help me how can i buy.
You can search and buy online for agar agar powder.
❤️❤️❤️
What brand of coconut milk do you use since how thick or thin the coconut milk will he makes a difference in whether the coconut will float or not. Did you use a can of coconut where the coconut milk is thinner and there is a layer of harden coconut cream on top that needs to he mixed back into the liquid or did you use a box of arroy Dee coconut milk in a box?
I used Heng Guan brand
Great video guys, we really enjoyed it and gave a big like and subbed
Thanks
You're welcome
mine didn't separate as well. What should be the proportion of water to santan ?
As per recipe. You musn't disturb the jelly mould after you've poured the agar agar mixture into it. Any disturbance will prevent it from separating. Also if your moulds are small, the agar agar may set before it has time to separate.
👌👌👌
Thank you 😊
Hi Eddie!! I was so inspired by this recipe since I have my own butterfly pea plant in my garden however I also made my version of it... and Yes, I will be uploading it on my RUclips channel as well. Hope you'll visit and give me some of your comments as well. Thank you so much!
Hello eddie can I use gelatine powder instead of agar agar powder
I think you can but I don't know the actual proportion for gelatin powder to replace the agar agar powder in the recipe
👍😍
Thank you 😁
Love🌻💛🌻💛💛
Hi Eddie can substitute santan with whipping cream?
I've not try whipping cream to make agar agar before. I'm not sure if you can get this separation and the taste will be different, I think.
No
cool ::)) love jt
Hi. May I know how long does it take for the layers to be separated? Thanks!
About 2 hrs or more depends the thickness of the santan.
Can I use regular milk instead of coconut milk
Have not try with regular milk and also taste will not be the same.
Nice
Thank you
What is the size of the die plate
are u using it ?
I used various sizes but at least 6 ins each.
I think, That would be make as a blue hair dye!!!!
Hi Eddie, I have tried to follow all steps but ended up with only the santan layer, the mixture was not separated. Could you please advise if any steps which I have missed out? Thanks!
Ok - 1. if you used a small jelly mould, the agar agar will set before it get a chance to separate. 2. Once you’ve scoop the agar agar mixture into the mould leave it to cool undisturbed. 3. Santan mustn’t be too thick when adding to the mixture and don’t boil too long. 4. Maybe your next try, you reduce your santan as it maybe too thick.
@@ShiokmanEddie what are the measurements of each ingredient? how long do u let the mix boil in between adding? and how long do u let it sit before u freeze it? By the way, thank u for this video ^_^

What r the measurements for sugar n.agar?how many flowers do we need?

Can we use passion flower
Yes up to you
How long does it take for the santan to separate and float up? My agar2 has been cooling for almost 45mins and no sign of separation!
About an hour and you musn't move it or touch at all.
Thx! Still no sign of separation.
Hope successful on my next attempt!
One more thing, your mould mustn't be small because the agar will set before it got time to separate. The bigger the mould, the longer time it will need to set.
@@ShiokmanEddie Noted! Thx for your advice.
Please tell me what is agar agar powered
Agar-agar is a natural vegetable gelatin counterpart. It is white and semi-translucent when sold in packages as washed and dried strips or in powdered form. It can be used to make jellies, puddings, and custards. When making jelly, it is boiled in water until the solids dissolve.
Is this also blue trumpet flower?
No that’s a different flower.
if I use agar agar strips instead of powder, how much will that be..?
Not sure, have not use strips for a very long time. You can Google for the conversion
Can we use normal milk instead of coconut milk
It will be totally different in taste. I've not try using normal milk for this recipe
Are these food items safe to be mixed in terms of chemical properties?
I can't answer that question. You probably have to research about it if you've any concerns. Well so far nothing bad happened.
Hi, Eddie. May I know where you buy the Bunga Telang from? It’s next to impossible coming across these growing wild now. My mom used to sneakily just pluck these from random people’s fences, when she wanted to make Nonya kueh. Thank you.
I grew my own but they do sell online. I've come across a few sites that sells it but quite expensive. I've also bought some from Malacca at the Jonker street area. There are many shops selling them in small packets.
Hi Julie where are you from? if from Ipoh i can give you some.
meg Thank you very much. That’s so sweet of you. Unfortunately, I am nowhere near Ipoh.I am way down south in Singapore. Have a great weekend ahead, Meg.
Julie, sorry I didn't know that you're in Singapore. I've heard that "Kim Choo" in Katong is also selling the dried blue pea flowers besides their nyonya kuehs and changs.
Shiokman Eddie Thanks Eddie for the info. Will pay them a visit when I go to Dunman food centre for my wantan mee fix over the weekend.
Hello! I tried the recipe, however my jelly does not set, what shall I do? Thank you!
I'm not sure why yours didn't set. If you follow the exact amount of agar agar and water, it should set easily. Maybe I suggest to add a bit more agar agar powder and reboil it. Could be your mixture is too diluted.
Can i use gelatin as a agar ??
Yes but process will be different. This recipe is for agar agar where you need to boil.
Never knew you could eat flowers 👁👄👁
Can i use blue colour instead?
Yes you can but you won't get the subtle flavour of the blue pea flower.
is santan a brand of coconut milk? can i use other brands
No santan is coconut milk. Yes you can use any brand or freshly squeezed coconut milk if available.

Santan too thick. Try diluting it.

Shiokman Eddie ok 👌
is there any alternative of coconut milk?
I'm afraid not. You can try with fresh milk but the taste will not be the same.
Beautiful ! In India the leaves, flowers and roots of this plant known as Aparijita are used in Ayurvedic medicine. Not used in food.

@@ShiokmanEddie oh thanks
Agar agar powder meaning pls !
what is it?
Its a jelly-like substance, obtained from red algae. Its a natural vegetable gelatin...
China grass
I tried but why the santan didn't separate and float up?
After you poured the agar agar mixture into your mould, you must not touch it or shake it to allow it to separate. If there are any movements it will be mixed up again. Also if your mould is too small, the agar agar will set before it has time to slowly separate.
Why no pandan leaf?
Because I want it to be blue and not any shade of green. Its up to you if you want to add it
