At around 3:45 all of a sudden the sounds are different on the Left and Right channels.. What's going on there ? It seems to end around 4:30 and then comes back in more subtly later.
Two upper knobs divide partials into banks and send different content to odd and even outputs. This two outputs are used here to produce stereo signal, but it is possible to use them as two different timbres similar to wave shapes from analogue oscillator.
These are different beasts. Despite the fact that Sofia is analog and Odessa digital, they use a unique types of synthesis that gives different results. Odessa can be cold, glassy or metallic, disharmonious, have up to 5 voices in unison, all of which will be difficult or impossible to get from Sofia. Sofia, on the other hand, is a bit like formant synthesis on steroids, capable of acid flavors without the extra filters. Tons of self-patching options provide a more open architecture for experimenting with incorporating other modules into the voice core. Both can offer rich sound, but both have their own unique sound signature. It is difficult to give advice that is right for you. It's not like I want to say BOTH :D.
Sorry it was some time ago and I don't remember, it can be TINRS Tuesday or Eloquencer, but you can achieve similar effects with Moskwa II, also it is possible it was more complicated patch with some simple modules like Tirana's switches, some random and quantizer.

Sorry, I don't remember what I used. maybe some mix of Leibniz Subsystem and some dividers and Sinfonion for quantization.

What's happening with that zadar bottom right? How come it's going up and down instead of left to right?
It is just interference with the frame rate of video, it was probably looped in audio rate :)
