Yellow jack is great, one of the fish I keep to eat as my market doesn't pay as much as I need to not eat them. Not really common but I take a couple when I see them.
One of the guys brought some sort of trucker oven out on the boat this past trip and we made amberjack steak for lunch. It’s been a while since I had yellow Jack.
Seems like such a sensible way to harvest. Very specific target, easy to monitor catch, little to no by catch. Furthermore could be possible to have buyer Order before harvest, works at both ends. Be safe, keep the sustainable harvest going !

They make dip and fish sandwiches with them. I really like them grilled or blacked.
