    Great tutorial, Nenette! Thank you 😊 you mentioned at the beginning that you like the hand-rolled truffles not made using pre-made shells. How do you make hand rolled truffles without the pre-made molds? So that you can fill them with ganache or caramel? X

      Hi Joanna. Thank you for watching and for your lovely feedback. To hand-roll the truffles, simply place your bowl of ganache into the fridge to set - it won't take long. Then take a teaspoon-full of the set ganache and roll it in your hand to create a ball shape - using the warmth of your hand to create the shape. Put these balls on a sheet of parchment paper and back into the fridge to harden again for about 10 minutes. Then you can dip them in tempered chocolate or roll them in cocoa powder. I'm not sure the caramel would work like this - you'd get a bit sticky!! I hope that helps!
