I'm Croatian and I ate a shit ton of those sardines ever since I was a kid. Just to clarify what you ate because I understood you said "salted sardines" - "sardine u biljnom ulju" means "sardines in plant oil". And they are cooked and not cured in salt and I read one comment that says they are not gutted - they are. The spine is something I'm grossed out too since I was a kid and I too don't eat that, but the "normal" way of eating sardines here is just putting the whole sardine in your mouth. Spine and all. Sometimes when locals catch them they don't even gut them, just put them on a barbecue and eat them like that.

Lol those are not "pork brains"...it's a pate made from a combination of pork and beef along with spices...mainly pepper, etc. The reason why it's soft is because it probably stayed a bit warm for a while, if you put it in the fridge it will stiffen up. Oh and I eat those sardines (you can buy them in every store here in Croatia as you can buy the pate and luncheon) every once in a while...however. I do prefer tuna or mackerel. That is usually the default, sardines in sunflower oil but you can buy them in olive oil, tomato sauce, vegetables, etc.
Well my translate app found the word brain on there twice so I thought it was a safe bet. And if you think slav rations are better than this one, hook me up with one and let me decide for myself😉

Ok, as a professional cook for over 20 years, I've actually become a fairly adventurous eater. My stepmom is full blown Chinese, and I've eaten many fish baked whole, head on and everything. I actually love fish. Except for salmon. And SARDINES. I just don't like em. And yes, I'm American and my tastes do tend to fall in the shitty fake jalapeno cheese side of things, but just cause I don't like sardines doesn't mean I'm all chicken nuggets and mountain dew, bro.
