Sharpening a double bevel Santoku knife with natural stones

    A couple of years have gone by. I am sure much knowledge has been gained. Any changes to your sharpening technique that have been game changers for you?

      Indeed, a new video would be nice as I changes some few things : 3 things maybe : I use Naniwa pro 3k , Yellow Coticule and a nature leather. I start at the heel and go gently at the tip but I don't go back to heel then. I would stop and start again at the heel if necessary, this give a lot of stability. Last one is edge leading strokes, I was mostly afraid of doing anything wrong but edge leading stokes with low pressure will deburr any foil edge and give much more durability to it.

      @@milangraviercoutelieryou use 3k naniwa in between natsuya and nagura or replace nagura with the 3k? Like natsuya > 3k > nagura > suita or natsuya > 3k > suita ?

      ​@@triccsshey. For the knives I make, they are thin on stones and they don't need more than a 3k to create a burr in few seconds. So I start with 3k to set my bevel. Then I use coticule that is like nagura grit maybe. Then I strop on leather.
      I don't use Natsuya anymore for sharpening. If I need coarser I will use naniwa pro 1k or nsk diamond 800. Sometimes I will use mikawa nagura, it is burnishing more than coticule. If I want finer than coticule edge, I will do 3k naniwa pro, mikawa nagura, suita, leather

    I see you sharpen on the left side at about 30° angle or more compaired to right side.
    Are you doing the 70/30 ratio and for longer edge retention sacrificing sharpness for thickness or what ?

      it's a 1.5 years old video so I can't really remember. But I don't think you can really guess the angles I am putting from the point of view of the camera. I would say I was giving about 15 degrees angles both sides, but really can't say much about the sharpener I was 1.5 years ago. If I am doing little asymetric sharpening, I would do about 60/40, 60 would be the right side of the knife, meaning the one with no logo

    What sort of edge you get? I find the amakusa gives quite a toothy edge. I was thinking of getting a medium and fine morihei Hi stones because my amakusa is morihei as well. Cheers

      Hey,
      Amakusa is a natural stone about 800 grit. Morihei Hi are synthetic stones and you can choose the grit you want.
      On this video I work from Natsuya to a fine Ohira, then leather strop. The edge I get is very smooth with some teeth but far cleaner than an edge from an amakusa

    Have any experience with Binsui? If so, how do you feel it compares to that Natsuya.

      Sorry no, I don't have Binsui. I got a red amakusa and it's coarser than Natsuya. Natsuya feel more dense, consistent, abrasive, better quality overall

      wow, pretty stones, i might give one a try. There seems to be a significantly better selections of J-nats than American stones

    What’s the last stone? Or strop leather?

      Hello, last stone is Ohira suita and then I finally use a strop leather indeed. Made it myselft : walnut as base, the leather is "pikara" : cow leather, neck part. I use it without compound, works just great like that

    very nice, I am getting sick of American stones, they see to be shrouded in some type of mystery, the mines close down, and some items are no longer available (that is crap). all are 'rare' or 'vintage'. (that is crap also) Many thanks for the video.
