    I am Canadian and am very familiar with real maple. Before I started watching blinds, I tried Gentlemen Jack as one of my first whiskies and I detected the banana note immediately.

    Notice that Ben Richards the Butcher of Bakersfield is conspicuously absent from that list! In my review of JD Single Barrel Barrel Proof, my hatred of all things Jack Daniels quickly dissolved from the deliciousness of "coffee and maple bar donuts" and sweet caramelized sugar goodness, but IIRC no banana notes at all. Props to Doctor Mister Dillon and his amazing nose and palate - I'll have to send him a bottle of Woodford Batch Proof as tribute. SCIENCE!!!!!!!!

    I have to say, Dutch nailed it. If there is any banana note at all with JD, it's a few slices of banana on top of a full stack of buttered hot cakes smothered in maple syrup.

    I have never smelled anything more distinct from unflavored alcohol than the banana laffy Taffy from Gentleman Jack.

    The thing about isoamyl acetate is that current cultivars of banana don't actually contain that much of it. The Gros Michel banana which was mostly wiped out by disease contained a lot more and was the basis of what artificial banana flavor was based on. Things like Runts and Circus Peanuts have a lot of isoamyl acetate and would be a better test.

    Isoamyl acetate is a biproduct of the yeasts used at the Jack Daniel’s distillery. If you take the distillery tour, they will tell you about it.

    I agree with Dutch. I’ve always gotten maple > banana in JD, nose and palate.

    TL;DR- isoamyl acetate causes the artificial banana note, is chemically detectable, and is found in varying concentrations in Jack Daniel’s products.

    I care and I agree. I’ve never understood the banana comments. Go drink some good rum and find a real banana note in your spirits

    The experiment should have used over ripe or baked banana pieces which is exactly what it smells like, (and I love it). 😊

    I completely agree with the results. The notes I get from JD Barrel Strength Bourbon and Rye is pancakes with maple syrup, especially the Heritage Rye! i have never gotten bananas from the BS products.
