Flavorful seared goat meat (Somali Hilab Ari)

  • This is one of my father’s favorite food, he loves his goat meat. Whenever he calls me to let me know he is coming over to my place, I know exactly what to make and it never disappoints anyone. My goat meat recipe is very simple. It doesn’t require a lot of work because it’s so easy that all you have to do is combine all your spices and marinate the meat for about 15 minutes and cook it with little of oil, onions, bay leaf and couple pieces of cardamoms, add the water and forget it till it’s time through time to check up on a salt. After all the water is gone, it means your meat is very tender and cooked to your likings. I love the meat to be falling off the bone but hey everyone is different, maybe you like little of chewing on to the meat so go for it.
    Tips and advice: Cooking supposed to be fun so simple ingredients that showcase your dish is must. Don’t complicate things for yourself when it comes to cooking by trying to use all crazy spices and ingredients because most of spices do the same thing if you think about it and you will save a lot of money for not buying everything. Go for simple fresh ingredients and spices which is easy to find and has a lot of flavorful impact on your food.
    SIMPLE INGREDIENTS
    Goat meat (ribs or any parts is fine)
    2 onions
    Cilantro
    1/4 cup of vegetable Oil
    Bay leaf
    Maggi (chicken cube shocks)
    Spices
    1 teaspoon of Garlic powder
    1 teaspoon of Turmeric
    1 teaspoon of Parsley flakes
    1 teaspoon of paprika
    1 teaspoon of cumins
    Little of black pepper
    1 teaspoon of My homemade xawaash (onion powder, cloves, cardamom, cinnamon, ginger and coriander grounded into a powder)
    1 teaspoon of Indian curry (Cari An Do) it’s Chinese curry, don’t let the Indian curry trick y’all. Haha
    1 tablespoon of soy sauce
    1 tablespoon of white vinegar
    1 tablespoon of oil and 1 tablespoon of water.
    Mix all your spices, soy, vinegar and oil and coat the meat. After that let it sit for 15 minutes (or so but overnight is works wonders when you marinate the meat and let it sit in the fridge till your ready to cook it). After that put a pan on a medium heat and pour the oil, then after a gets warm, add the onions, the bay leaf and cardamoms then let it cook for 1-2 minutes till the onions is softened and smells delicious. Then add the goat meat, stir it and let it cook for about 5 mins in a covered pan. Stir it again and cover it for another 5 minutes. After that add 3-4 cups of water and stir it and forget it for about 30-35 mins or a medium low heat. Check for the salt when the water half gone and adjust the heat. Cover it for other 15 mins. After all the meat is soft and very flavorful and tender than turn off the heat and garnish with any of your favorite vegetables or herbs but in stick with my simple but favorite herb cilantro. Serve it hot with rice or pasta or anything you like because you are the boss in your own kitchen so do as you please heheh.

    I frequently go to Somali restaurants but when I try to cook goat at home it ends up really chewy and tough. Thanks for the recipe, will give it a try insha Allah.

      You have to boil the goat a minimum of 2 hours to soften it enough so it could be fried or baked etc.

    Yum, I had something like this when I visited Hargeisa last year; you can bet I'll try making this sometime soon!
    Question: is it traditional to serve the gravy/ leftover sauce, or should the pot boil down completely? I feel like when I ate goat in Somaliland, there was no sauce, just meat and rice.

      I usually save the gravy for breads, Injera, or use some rice over it as a sauce, that’s my favorite part when making a Goat meat, the soup, it keeps you warm and full especially in a cold weather or when you feeling under the weather, add some green chilies, ginger or some more garlic and sip it while it’s still hot.

    By 50 mins, does that include the 30 mins before and another 20 mins? Or do you do the 30 mins then another 50

      Depending on the cut of the meat, mine takes about 40-50mins when it is small cuts since I love mines well done off the bones, I actually like to spice up my meat overnight this way it absorbs the favors and cook it for about 40-50mins sometimes it takes an hour.

      You can serve it with rice, pasta and anything that u want, I also take the meat off the bones sometimes and make sandwiches from it. It’s really that good.

    What is the quantity of goat meat you used
