I feel ya man! I use to be big into ultra light back packing but now with two toddlers I’m thinking of moving into this life until we start hiking with them !
It’s actually not bad. I used to be a bit of a snob and turned my nose up at car camping, but it’s fun to be able to cook massive meals instead of dehydrated mush, and anything that gets the kids into the woods is a win!

We don’t do car camping , we do glamping with electric hookups , heaters for chilly nights , our tent is a Icarus 500 deluxe with separate awing , our kitchen is set up in the awning , we cook in a air fryer , does most things , and use a bbq for outdoors , there are sinks for you to go and wash up your dishes etc , middle part of our tent is our lounge , comprises of a revolution inflatable sofa 2 camp chairs table , and out bedrooms at the back , we use a king size yawn bed self inflatable, very comfortable. It’s recommended as a 6 birth tent , ample space for 3 . 😊
There are several factors (fridge size, how full it is, ambient temperature, how often you open, etc) but a 1000 wHr bank will generally get you through a weekend of camping where you arrive mid-Friday and head out late Sunday.

F-150 and my wife rocks a minivan so we can haul some stuff even with 3 kids.
