Another awesome cake. Love ur trace, cut smooth method. I am always amazed on how u get what looks like heavy pieces of decorations to not slip down or fall off the cakes. This is something I struggle with ALL the time.
With all of the different decorations and fixtures on the cake - edible and unedible, icing, wires, cocktail sticks, dowels etc, what advice/information do you give to customers about disassembly and cutting along with cake care?
I email them a sheet that lets them know there are dowels and straws in the cake to help prevent it from collapsing. If I add toothpicks and wires, I make them aware of them and tell them to remove the pieces before they cut the cake.
Hey Karolyn, this maybe a quick video discussion : You probably rarely get ‘under the weather’ (you just look like you take great care of yourself)-however…a person has come to you for their ‘special day cake’-what do you do when you fall ill RIGHT when it’s time to get down to ‘business’. I recently faced this and was at the beginning stages but Karolyn I didn’t know what to do. I was between a rock and a hard place for a graduate cake for a moms son. She had people coming from out of town…the works. Gosh..I didn’t want to let her down and while I gloved up and masked up-I just felt terrible about proceeding. As a professional how do you handle such? Love you always.
Hello love! Luckily, I don't get sick. In the past 20 years of making cakes, I haven't ever had to cancel because of sickness. When I left a bad relationship, I had 4 cakes that week and called each of the customers to let them know what was going on. Three of them were understanding and just said they would find somewhere else to get one. (I refunded all monies paid.) The 4th one was pretty upset, so I messaged a few cake friends and asked if any of them could take on the order. The cake was baked, filled and iced. It just had to be decorated. So I dropped it off at her shop and gave her the money I collected for that cake. I recommend befriending a few people in your area who make cakes so you can ask for help if you need it! If you can't find anyone and feel too sick, it's best to call the customer as soon as possible to find a solution. And maybe offer free cupcakes or something like that in the future for compensation. Things happen that are out of our control, it's all about how you handle the situation and try to be empathetic to their feelings!

This question has nothing to do with this cake. I need to know how you keep your metal mixing bowl and dough hook, and the beaters From oxidizing? When I make a white cake or Fondit it turns gray at the bottom of my bowl and turns gray and mixes throughout my batter. I have a problem with this I have thrown better away many times, I have washed my bowl and beaters with vinegar and I've even boiled them. Please help if you’ve had this problem.

I’m finally working with fondant, but I’m having a hard time understanding how long it takes to dry out the duck, the beachball and the big splash so they look good on the cake. It’s surprising me how much I should be charging for cakes. I’m putting in several hours into my work and only charging $100 and that’s for gluten-free cakes. I’m barely making enough to cover my ingredients. I’m the only bakery in my area that makes baked goods for people with food allergies, but people don’t want to pay that much.
With the Tylose added to the fondant, it dries hard enough to stand on its own within a few hours. (It works best with Marshmallow Fondant, if you're buying your fondant, it may take longer.) With what you're charging, you're basically working for free. I'm sure the people ordering from you wouldn't work for free at their jobs!
