Father-in-law's Paella Recipe 🥘

Ingredients:
- Garlic cloves
- Mixed seafood
- Fried tomato sauce: 1 tbsp per person
- Paella rice: 1 cup per person
- Seafood broth: 2 cup per person (we use the pre-made one from supermarket)
- Saffron
How to:
1. Sauté garlic, seafood and tomato sauce
2. Add rice, broth and saffron and let me boil for 20 min (first, bring it to boil with high heat and then simmer with medium meat)
3. Turn off fire. Put some cooked seafood on top for decoration if you want.
4. Cover with a lid or paper and let it rest for 5 min
5. Stir and enjoy!

Le papier sur la poêle me rappelle l’époque où en Espagne ils mettaient du journal t’avais en prime les nouvelles du jour imprimé sur le riz 🍚 🤪🤣🤣🤣

The one I like the most is the lobster one (and preferably local lobster), but if I'm feeling lazy, then the "blind" or ciego in Spanish is really good as well, since you don't need to peel off anything, you just eat. Also, the burnt/crispy rice is often the best part for me as well.

What kind of pan is it that he uses? And also is that regular tomato sauce that he added to rice?
The pan is a typical paella pan, flat and thin with two ears. It has different sizes, for 1, 2 persons and more. In the video, he used a pan for 6 people. The sauce is called “tomato frito” in Spain. It’s regular fried tomato sauce you can find in supermarket. Hope it helps! Happy cooking paella!

He did that before serving so that all ingredients and socarrat mixed together but it’s just personal preference. You don’t have to stir it.

Se nota que no tienes ni idea. No se trata de mezclar el arroz, se suelta para a la hora de servirlo no arañar la paella (la paella es el recipiente) y el alioli es de lo más típico para una paella, en España SIEMPRE se come con alioli, si no te gusta no, pero una cosa es que no te guste y otra es que tengas la cara de decir si es típico o no jajajaja para flipar.
It's quite common to add some alioli to the rice in Spain if you like garlic flavor! Give it a try. It intensified the seafood flavor! We don't stir while cooking. We just stir it before serving :)

I LOVE Spanish paella, but there is no way I would leave the heads on the prawns. The number of times I searched through my paella in Spain trying to find the missing eyeballs!
In Spanish restaurants in Spain, there are usually two options: paella with peeled seafood (no shell, no shrimp head etc) or seafood with shell. You can choose what you prefer when you are here :)

You don't stir while cooking. We just stir it before serving. It's quite common in a Spanish restaurant in Spain. The waiter would mix the rice before serving to a large group or you can choose not to stir :)
No lo remueve. Una vez hecha la paella y antes de servir, rasca el socarrat y lo mezcla un poco para que les toque a todos.
