How to make Toto cake also known as coconut cake

Jamaican’s Sunday evening dessert Toto cake or coconut cake, this is one of the easiest Jamaican dessert , it’s quick, simple and delicious, I haven’t made one in a while but my daughter has been bugging me to make it so here we go. Here are the ingredients used:
Toto / coconut cake
4 cups ap flour
1 cup sugar
1 1/2 tsp salt
2 tbs baking powder
1/ 2 tsp baking soda
1 tbs cinnamon powder
1 tsp nutmeg
1 tsp mixed spice
1 tbs grated ginger
2 cups of blended or grated coconut flakes
1 egg
1 stick soften butter
1 tbs vanilla
2 cups coconut milk
(If you use store bought coconut shavings you will need 3 cups coconut milk)

Toto was the poor people dessert on a Sunday not everyone could afford Ice-cream ( Neopolian) and Jello, Pudding was next Sunday dessert thanks for the recipe gonna try your version

Nice, I love it, your right e very Sunday after grater your coconut to cook rice and peas my grandmother used the some of the coconuts to make toto or a cornmeal or potato pudding

Thanks for this recipe. I make mine different but I like it with adequate salt like yours. Adding a little more salt than usual in a spiced cake just makes the spices explode.

Yes you can, you will need more milk, I usually use 3 cups when using store bought shredded coconut
