He would not make a video about what you need, because he doesn't know how to do it. In this video he used a reversible single speed/fixie rear hub. That's why he used the same spokes. When you have a rear derailleur bike, the hub flanges are not symetrical related to the rim. It means it needs other spokes. The left spokes are longer than the right spokes and it is necessary to calculate their lenght. This involves some precise dimensions of the rim and hub, and this so called mechanic has no clue how about how it is done. Morover, from calculations, may result non standard spoke lenghts and it is quite sure this dude has no skills and tools for properly cutting and threading spokes. And all of these involve more money which makes more affordable to change the bike with a disk beakes one than trying to do such conversion. In addition, the rim brake frames are not sturdy enough to take on the forces from a disk brake caliper.
I can already see a problem with this. 1. You cant take off the wheel now without removing the bracket more hassle when you get a flat tire on the road. 2. The bracket is not greatly secured on the frame cause in ths vid you can see it wobbles side to side. Making for uneven stopping power and uneven wear in pads.

The most important is the alignment of the rims, so that it wouldn't wobbling the tire.

Yeah it looks like kind of a cheap setup. I think I'll just stick with the caliper brakes. Or buy a bike that came with disk brakes.
The wheel must be wobbly as he did not align the spokes using the aligning machine.
