It is obvious how good you are in learning each bit of the techniques and steps to make injera. @Chad Dykstra , Thank you for reminding me how good a chemist and an artist my mom is.... She makes the most beautiful injera in whole world, and she means the world itself to me. Injera and family forever !!!
After failing twice making ingera ... you have given me the recipe for success. Your recipe makes a lot and it is absolutely wonderful. Used a separate recipe for the teff starter but this was great. Thank you.
I say thank you being transparent in the making. Being Ethiopian had no idea of making Injera until I got the lesson from you. By the way, I was watching your whole process with my wife who had tried few time in past and could not make one. I now telling you that with your feedback she is making great ones. I salute you!
you are emazain,I'm ethiopian ertrian I never knew how to make injera, I try to many Tim neve come great I was give up. but when I saw your video frst time I gat the lesson from you, I know now with your feedback making Injera thanks much
Thank you, I am Eritrean and I LOVE enjera I ate it my entire life almost daily without knowing how to make it. Now that I started living alone for two years I never had at home.
You are awesome. Very observant every little details, you did mot miss. Thank you for posting. Your video is more appealing to young Ethiopians/Eritreans who grew outside the country When they are ready to make injera.
Just wanted to let anyone who's looking for a suffid (cooling mat) know that I got the sefed and the large seteta at Brundo Market online. If you're paying for the shipping you might want to get both of them, as the sefed is thicker than the seteta and might be too thick to get the injera off the grill without scratching it but is good for cooling. Also, I found that using distilled water instead of tap water made a huge positive difference in the fermentation. I didn't actually use a starter, but left out the teff flour and water on the countertop for 2 days. Another thing that made a big difference was mixing in a little baking powder, about 1/3-1/2 tsp, to each cup right before cooking it, since my version was gluten-free and didn't have self-rising flour. This transformed the injera from a gooey mess into a cohesive round pancake with lots of "eyes" even when I poured the batter into a corner of the grill. Thank you for posting this video, as I never would have been able to make the injera without all of your tips. Although my final version was tweaked to account for wanting it to be gluten-free, the basics came from your shared experiences and your efforts in making this excellent video are much appreciated!
Great technical demonstration of how to make fantastic Engera .I am still struggling to get that texture and consistency needed in order to make perfect Engera like yours.. This video makes it easier. Thanks for sharing Chad
You’re brave young man! I always buy from the store instead of making it. But recently thanks to quarantine I just started making. It is healthy and financially wise too! Thanks for sharing your experience 🙏
Thank you for your video, so amazing to see people that’s not Habisha (persons of Eritrean/Ethiopian origin) make my cultural national dish. Great to see it’s a habisha food night in your home. ❤❤
I have an eri friend who makes injera and it's so delicious, thank you for the tutorial, I will make this for my family, since I have an ethiopean background....
I live in Melbourne and I have tried so hard to make injera which I followed a lot of recipes on RUclips and failed until I came across to ur video which makes it easy !Love ur recipe and thanks for that!
Thank you so much I really appreciated it God bless you. Please make more video and by the way I love the message on your t-shirt "love know, no border"
You can make injera with 100 percent Teff if you want, you just need to add a little bit of bread yeast along with the starter at the beginning and do absit 6 hours before when you are ready to bake the injera. Add a teaspoon of baking powder when the batter is ready to be baked. I have tried this method many times and it works like a charm to get beautiful 100 percent Teff injera.

Wow, you are so amazing awesome guy! You know what? I am Habesha one of those people who feed injera traditionally. When I was in back home it was easy for me to make injera using the normal tools Mogogo and so on, after I came to western I don’t know whether it is from the type of flour or weather. The injera I tried to meake wasn’t good and was terrible to eat (wasn’t testy as usual) and finally I left to make. So your video was very helpful to initiate me and try it again. And it helped me a lot to make better and even best. Thank you very much, may God bless you abundantly.
I really appreciate the way you make it. I am from Eritrea, I was making good injera while I was back in my home country. Since I am here in North America I am not able to make good injera. It might be of the difference of the ingredients or the type of mogogo. Your way is helpful, thank you for sharing. For sure, I will try it and hopefully I can make good injera.
My mother makes injera w/ Aunt Jemima self rising flour and teff mixture, and though the flavor is good, the texture and bubbles don't come out as good as yours. Impressive Chad. Thx for sharing.
Your video was very helpful. I had tried injera a week or so earlier, but it wasn't very good. So I looked at some videos, found yours, and tried again, with a mixture of ivory and brown teff flours and an established gluten free sourdough starter (brown rice flour). I have a Tibos electric crepe/dosa griddle (13") which worked pretty well. Your guidance was much appreciated. Thank you for your effort in making the video.
Thank you so much for the video. You have inspired me to start making my own injera. The injera sold here in , San Diego ,is not good. I also didn't realize how time consuming it is to prepare injera. No wonder it is DELICIOUS:)!!!
Wow! You did a great job! Thumbs up for you. I enjoyed your video. I'm an Ethipian and started making enjera( it's called biddean in Oromo my language) since I was 8yrs old. The way you do it is much better than I did. I will do it your way to make it better next time :) Thank you for uploading this! Would you plss show us how to eat enjera/biddean with doro wat on your next video?

Chad, your skill of making injera is amazing!!! I used to make the best (as my family used to say and my father talks about it to this day... "Eyenu betam yamare sis enjera," (to mean perfect uniformed small holes aka eyes that is thin, for my father didn't like thick enjera) when I used to live in Addis, but it's been a real struggle trying to make it here in the US. I've been using only teff flour. I'm going to try your recipe and see how that will work... Your Amharic is impressive as well. Your family is blessed to have you! God bless.
