@@MannyKings5 texas has good shit, no cap. But southeast mustard and vinegar style is good af too. Id love to see a bbq series where he tries many different styles
this was amazing Alex! I love Ramen_Lords passion and am so glad that he’s getting to do something he so clearly loves day in and day out! Kudos and thanks for sharing this video with us!
Alex, you're going to need to go to Texas or Kansas City for a BBQ roundup. Cooking brisket American style. I mean, if you can obsess about ramen as a French person, you can obsess about brisket.
There is some crossover too. You can learn a lot about slow cooked meats from those guys in the south that could easily be applied or adapted to chashu. Now that i'm thinking about it, i need to start experimenting...
That looked like a good brisket, but if you did a BBQ series based off what you had in Chicago you'd be laughed off the internet. They're imitating Texas style BBQ. If you're going to do the series you want to check the Texas Monthly BBQ ratings. Currently, Goldee's is #1, but anyone in the top 10, or even top 50, can walk you thru the ritual. Someone on that list will do a collab for the free publicity, too. Just be ready for the Talladega Nights references. :) Kansas CIty has a vinegar-tomato based sauce, the Carolina's sauce is more mustard-y, and the Memphis style leans on spices for the dry rub or a brown sugar-tomato based sauce for the wet. You might find sauce at a place in Texas, but it shouldn't need it. Texas BBQ is pure skill of the pit master.
Oh boy, am I hyped for the next episode!!! I already made a plan with my brother that next year we will both take a month out of our schedule and devote it entirely to learning how to make ramen. Thank you for the inspiration, Alex! Much love!
I was lucky enough to experience this firsthand - the photojournalist in me is a bit disappointed I didn't ask if I could pop back to the kitchen for some photos, but maybe I was too busy enjoying the wonderful dishes these two masters put together.
Alex there is another Chicago guy @mightjoeyim who loved Texas style BBQ so much he went and moved to Austin and worked at several of the top TX BBQ restaurants. He’d be an amazing resource if you decide to do a BBQ series. I think he’s started to do pop ups so would be 🔥 to see what you guys could come up with if you do a French/bbq fusion collab
Very excited to see the next episode with the actual service at the pop up. You can't beat the enterprising of Americans. Where else can one make noodles at home, sells 300 tickets in 40sec and serves them in another restaurant.
Guessing "Mike's friend, Charles" is Charles of Umamicue? Absolutely amazing food. They're doing a residency at Spilt Milk right now in summer of 2023.
Alex, I need you to know, I had my first bowl of “proper” ramen this week. Thanks to your series, I knew how to eat it properly! My slurping skills are not very good. But your series really gave me a much deeper appreciation of what I was eating.
Alex - if you really want to go on a deep dive for your next food series, I'm not sure if there is a food as challenging and frustrating and yet, equally, as rewarding and delicious (if done right) as Texas styled bbq brisket.
Geat Video! Honestly what I love the most about this is that the are preparing in an apartment! It perfectly shows that there is not as muuh a gap to professionals if you know what you are doing. And since Alex is perfectly showing everyone how to it I am really hyped for the end of the series (as sad as that seems) because then we will have a crack at it.
Mitsuwa in Arlington Heights (North Chicago Suburb)...Hands down best Ramen/Udon/Japanese Bakery/Grocery/Manga/etc in Chicago land area. They've been serving killer bowls for over 25 years +. Not exactly sure how you missed that on your Chicago ramen journey, but make sure to check it out next time you're in town.
Best of everything for the pop up Mike and Alex! Every bowl will be an achievement. I hope every guest has a memorable positive experience. It's surely something you won't forget!
Wow, the pop-up were back in October, can't help but wonder all the things Alex have been up to in the meantime. And I can't keep my excitement in, for the next video to come. Good Work Alex.!
Alex I have to say I am loving the Ramen series but I see my chance here to say I would love to see you do a series on smoking! The type where you smoke food mind you xD I have bought a small box smoker within the last year and I have become the star of my friends making everything from ribs to pulled pork. However I would love to see someone like you dissect the art and learn more about it with you! Putting my bit in that I'd love to see that series from you. Cheers!
If you ever want to try to make ramen you will most likely come across one of ramen lords guides. The man has some of the best guides for ramen on the internet.
Great learning about Ramen_Lord. I love his ramen production in the living room. Unfortunately I don't eat or serve enough ramen to have a machine like that so I have to do with my Mercato. I do make a larger portion dough and divide it into single portions. Then wrap it in a plastic bag and take out one portion at a time. By the end of the week, the last dough has fermented and gone a lot softer than the first dough. This is very interesting and adds a surprise to ramen eating every time I make my dough. My doughs are rarely the same. Sometimes barley mix and sometimes rye mix. I wish I could curl my ramen like that cool machine in the living room did. Looking forward to seeing the next episode, Alex.
While this is kind of awesome (the home noodling), is it legal? By this I mean: does he have food inspectors come to make sure the place meets restaurant standards for selling food to the public? I was thinking about it the entire time, and then at 11:38 I saw him pick up a noodle that was touching the floor and put it in the box and I cry. Am I too much of a germaphobe... maybe. 😭
The BEAST in Paris served good American BBQ, I made the trip from Belgium just to try as I love American BBQ and love to experiment with BBQ techniques. They still exist, but the do popups I think. The guy who owns it, knows what he's doing.
before you started this ramen series (season 2) i had no idea what ramen was I thought it was just the name for noodles or spaghetti in japanese.... I've learned a lot. (and i still have never eaten it)
The video is great. Discovering Ramen_Lord is exciting. But I'll remember that video for your "Oh putain" Alex (9:37) ! So funny ! And yes I would love to try such a brisket. Hey can you make a series on great bbq next Alex ?
The face of my 6 years old french girl at the 9:37 mark made me laugh soooo hard. (she don't speak English) Speaking of... when are we gonna have a brisket series ?
What cut of meat would you go for to do something similar to a brisket in France? I just moved there and speak no french and all the meat cuts are different...
Alex: makes an excellent ramen video featuring Ramen Lord himself. Comments: Yo, but did you see that 3 seconds of brisket tho? ...and I'm one of them! You'll need to come on down to Texas one of these days, Alex. I'd love to see your take on my state's beloved dish
Good to have progressed through the series and really gotten to "peak ramen", so when the "noodle making machine the price of a car" showed up it was clearly *over* the top :-)
I make my Chashu for years (?) after a recipe from Ramen_Lord ... love it. My son loves it, my Neighbor loves it. My daugher likes Chicken Chashu but I love her nonetheless.
Alright Alex having just eaten american BBQ for the first time I have to assume after the ramen series vol 2 there will be a series about BBQ.
Yessssss please
I'm sure he will probably nail it without a multi part series
@@jacobkudrowich Those are the words of someone who has no idea how hard it is to make passable brisket, let alone amazing brisket.
That would be amazing, barbeque over ramen sounds like a fusion I need in my life.
@@howHumamthere are a few Asian inspired bbq places in Texas doing just that. Amazing
Alex's instant love of Brisket makes me wish for a series where he travels around the states to learn how to make the best BBQ brisket.
The state*. He only needs to go to Texas
I had to rewind that part a few times. You can tell it sparked something in him. There’s no way a series on it isn’t coming.

That brisket looked SO good when Alex tasted it, I got distracted and started thinking of BBQ instead of ramen! 🤣 🍜 🤣
...Brisket ramen?
That brisket will haunt his memory. I bet money on a future series about this.

I know the exact guy for that: Tender Smokehouse in the Dallas area does wonderful BBQ and owner (Dante) would be definitely game for it. :-)

You can just "scrunch" your ramen by hand, that's the old-school technique. The "curling flaps" simply replicate hand-scrunching.
@@tomodda1 Yes, that works for the same day ramen dough. After a couple of days, the dough gets too soft and sticky.
Do you get a sourdough flavor after it ferments?
@@majcrash No. It just gets softer and when cooking it, it gets a bit more chewier.
I remember the lamination technique for croissants. It’s used in many pastries and pie doughs
