Of course omega-3's don't just disappear from heat. No more than any other fatty acid would, like omega-6 from roasted nuts. Vitamins don't disappear when heated either, they will transfer. I.e. vitamin C will transfer into water when boiling vegetables. However, this doesn't address Dr. Berg's other assertion, heat damage. Omega-3 is a polyunsaturated fatty acid (PUFA) that is very easily damaged when exposed to UV light, oxygen, or heat, which can be inflammatory in the human body. This is why highly processed fish oil should be avoided, because it's exposed to all three. Ideally, PUFAs should be consumed only in whole foods and as raw as tolerable.

Thank you, Dr. Berg. Important to know - - AND thank you for being so honest. Many people these days will not correct their mistakes, even when they have based former statements and beliefs on fairly good "knowledge" - not having done anything intentionally wrong. We need medical experts and leaders in all fields to be able to demonstrate and model honesty -and the courage to say - "I was wrong - here is the real data" - or - "I was wrong - I am sorry - that was based on old information -I questioned my results - and I chose to do further research and here are the new results."
If more medical experts would do this path of honesty, courage and goodness of heart - if more doctors would do this - we would have a shift in health care - and the quality of life that good diet and intelligent exercise can bring to most people.
    Again, Thank you!

Hello Dr. Berg ... Thanks for the information. My question: Should not tuna be avoided because of the high mercury content?

    • @Drberg

It's really nice that you care enough, and you're honest enough to have the research done by a third party even.
Then provide an accurate update to the Omega-3 content of Sardines and Tuna.
Not many RUclips health practitioners do this.
