Hi, the egg is what binds the bread crumbs to the Rissois dough. If you don't eat eggs you can use water or heavy cream as a binding agent for the breadcrumbs. Thank you for your question😊
Thank you so much! I have made several recipes for Pasteis de Camarao and either the pastry technique was wrong or the mix was too wet. Your recipe was absolutely bang on for exactly 60 rissois. I used beautiful prawn/lobster stock instead of the prawn water. Sooo tasty and perfect

The recipe definitely requires a little more time than I expected, but now that I have done them it will definitely be much easier next time. They came out amazing. FYI for those who do not have a granite counter top you should let dough cool more and extra flour. Only question I have is for freezing, they will be raw not battered, how long are they good for? Do you have a printable recipe form of this? I will be making the Sweet Bread soon! Than you for the recipes!
Thank you Michelle. You can place them in the freezer with the bread crumbs. The rissois don't last very long at my home, however, you can freeze them up to 60 to 90 days. I used small eggs for this recipe, however if I had large eggs I would use 6 eggs. I also have extra mixture. Better to have extra than not enough... Thank you for your question.🥰

I add nutmeg and cinnamon stick when making filling and when making dough add a lemon rind makes flavours pop more
