    The hilarious part about Sodium Citrate is its chemical name is NaCHO so you could say it is literally made for cheese. :D

      @@precant9756sodium citrate is a natural ingredient. Remember, salt is just sodium and chloride. You wouldn’t eat chloride but when it bonds to sodium it becomes table salt. And the body NEEDS salt. It’s an electrolyte. (Only if your blood pressure is high do you need to limit salt intake.)

      @@precant9756also sodium citrate is just another kind of salt. And it gives you citric acid which is necessary for the Krebs cycle (Citric acid cycle) which is VERY necessary for the production of energy in the body by making ADP and ATP. That equals energy.

      Actually if my memory serves me correctly, it’s Na3C6H5O7. Feel free to disagree - it’s a very long time since I did chemistry at school.

    Wow, you just saved my day. I was assigned to bring a jar of cheez whiz to a football event. I am reading the ingredient list and realize I cant have any of the cheese sauce due to an ingredient allergy.
    Now I will have homemade sauce that I can taste and I think at a lower sodium level than the whiz!! Thank you

    If you add some chopped pickled jalapeños at the thickening stage it’s a lovely spicy kick. If you do make it with wine add a touch of garlic, then after thickening pour it into a bowl, it’s a great cheat fondue.

    I like the white cheese you get at a Mexican restaurant. Could you use white American cheese in this recipe to achieve the same effect or is that something different?

    I made two batches of this magic cheese sauce this evening. One with Pepper Jack and the other with seriously sharp cheddar and omg they were both soooooo delicious! I used beer in both. My husband and I finished off one batch and got halfway through the other before forcing ourselves to stop eating. Thanks for yet another wonderful recipe Louise!

      @@95ffdI actually used Michelob Ultra. It’s very light. Closest thing to being water but still beer. Lol

    I have done your recipe with cheddar. Marvelous. I tried the same with Parmesan (+ Grillo wine) and failed. Just a question: What is the effect of Sodium Citrate, if I use too much or too low of it? I guess a tee spoon of Sodium Citrate for Cheddar is fine. But other cheese could result in different results. What is your gained experience?

    When i melt commodities cheese into liquid i found that milk just gums it up and makes the flavor weak - water , butter and garlic seems to work good . Ill have to try the sodium citrate thing .

    I love this!! Can you freeze the cheese sauce? I want to make some up and try my hand at freeze drying it and making a cheese sauce powder. If it doesn't freeze well it probably will not work. So excited for this, no more processed cheese sauces!!

      @@TheSaltedPepper I know how to make a Mexican queso but it uses processed American cheese so this is great that you can use real cheese and get it like this!! Already ordered the sodium cytate!! Thanks again!!

      @@muddyacrefarms the flavor of the queso will be different because American cheese is unique in flavor, but I’m sure you can adapt it. Maybe use a Monterey Jack cheese

      YES! I'm trying all kinds of cheese! I did a garlic mozzarella version today. It needed 1 cup of water to stay liquid, but it did! I might just become the cheese sauce recipe lady! LOL

      @@TheSaltedPepperHi Louise! Know you’re busy, but I followed your directions to the letter and mine didn’t turn out. It got too thick. I used exactly 1 tsp. of sodium citrate. Tried to thin it out and it never really congealed.
      Any advice would be great, as I am a cheese aficionado. Thanks in advance! 😊

    I’m probably going to get grief for this but I love nachos made with that real cheese like substance Velveeta. Can velveeta be used?

      You can use Velveeta, but it already has the chemicals in it for melting so just add a little water and chunks of Velveeta and melt it until it's smooth.

    Is sodium nitrate a preservative? I never heard of it? Can you add the link for Amazon because there is different kinds on Amazon? I’m sure I don’t need 5lbs. Lol

      It’s sodium citrate (not nitrate) and the link is in the description. It is basically baking soda and citric acid combined that creates an emulsifying salt.

      Emulsifier. Keeps the fat and water from separating (“breaking”).

    Additional fun fact: You can make sodium citrate at home REALLY easily:
    Just combine any citrus juice and baking soda.
    Just add baking soda to your juice until it almost stops fizzing. The juice should no longer be sour and just be salty.

      I tried that! Unfortunately, it didn't work in this recipe. I was really hoping to be able to give people that option, but the cheese sauce was a clumpy mess. I'll have to try again.

    The way you’re pronouncing citrate makes it sound like you’re saying nitrate! I almost stopped watching because sodium nitrate is definitely not good for you! Cancer causing even. Next time maybe you can pronounce citrate as “sit-trait” not “sight-trait”. It would be terrible if people didn’t get this great, simple recipe! Yummy!

    Sodium citrate is not good for you have stomach problems can cause diarrhea,nausea,vomiting and stomach pain.

      Sodium citrate is simply baking soda and citric acid. and I hardly think this minuscule amount would bother most people. Everyone can decide for themselves of course.

      Me too! LOL, The funny thing is I know how to pronounce it; I'm a nurse. I have no idea what happened in the video. Making one of these videos is much different than simply watching one, so I give myself and every other video creator some grace. We aren't perfect and don't catch everything that goes awry. Perhaps you could as well.
