Let's Make Lemon Cake Mix Cookies | Cooking at the Lake House

15.25 ounce lemon cake mix (1 box)
2 large eggs
½ cup vegetable oil
confectioners sugar optional
In a large bowl, mix well to combine cake mix, eggs, and vegetable oil.
Place dough in the refrigerator for at least 30 minutes to chill (If you would like unless you are short on time like I was in this video. I prefer the chill time).
Preheat oven to 350℉. Line cookie sheets with parchment paper.
Form dough into 1-inch balls. Roll in powdered sugar, if desired. Place balls of cookie dough on baking sheets at least 2 inches apart.
Bake 10 to 12 minutes.
Cool on cookie sheets for 5-10 minutes before transferring to a wire rack to cool completely. ENJOY!!!!!
