Actually, Tim doesn't use sheet music per se when writing, even though I'm 99% sure he has classical training. One of his main methods for writing is using a synth to program a crazy MIDI sequence in a DAW and then figuring out how to play it on guitar. I guess you could say it's the modern day equivalent of sheet music.
Their live playthrough of Chimera is a great example of this kind of classical/spanish guitar fused with traditional metal riffs. Definitely worth checking out. Great reaction my friend!
Tim is definitely my favorite guitarist right now, hes so cool, and his ability to mix all his techniques together, like harmonics, hybrid picking, tapping, and it still comes out melodical unlike some other progressive artists where it kind they kinda move away from the time signature and make it sound strange
I've been playing some Polyphia these last years and believe me, harmonics are by far not the hardest parts in their songs. Actually, its a relief when you have to play them in comparaison of the other stuff

He does transcribe his songs to tab/sheet music after creating it though (which you can buy from their website for comparatively cheap)
