I like the recipe, but have two questions. 1) when you cook it down for 20 minutes, what heat setting should it be at? 2) I don't know where to get cooking cream? Our grocery stores don't't carry it. Can we use heavy cream or something else?

Very good and simple recipe. How about removing just one or two mushrooms before blending then add back into the soup like your first picture shows?

Which variety of mushroom do you use?
I used button mushroom and sometimes I use shiitake but you can use any
