Just catching up here, your kitchen is definitely going to be a WOW! I have pine work tops at La Petite Maison, including the sink unit, they’re 26 years old and a yearly paint with yacht varnish has kept them good and strong and free from water marks etc. Bonne chance xx

I have wooden counter tops but don’t recommend them as they require more work to keep clean and they do absorb germs, smells etc. Plus they have to be oiled from time to time. I regret putting it around the sink especially. If I may suggest a man made “Marble Look” top which is so much more hygienic and you have the aesthetic beauty it adds : the brightness in contrast to all the wood, the dark floors and walls. A light counter top will add a big plus...in my opinion (In a year I’m building a small house and that’s what I’m going for after reading dozens of magazines on what’s best 💕😂💕)
I was wondering about that decision myself. I do like the drawer idea for storing larger items, but a bit confused about the shoes. Wouldn’t it be great if everything in life was modular? Then we could simply remove the parts we didn’t like or need and replace them with something more suitable. Of course, we would need a craftsman like Tony around to “Frankenstein “ it together. Very fitting term for this kitchen, Tracy.
If you use an oil based finish on the wood it will not leave water marks because the wood's oil base won't absorb the water. I have several custom pieces the carpenter used an oil base on and I have never had problems with water marks.
Do you have a product called Caesar stone over there? I live in Australia. Caesar stone is a manufactured stone top. Comes in a large variety of colours. I have had this in my kitchen for over ten years. Still looks brand new.
I’m in Western Australia, and I have Caesar Stone too, which still looks incredible 10 years after our renovation. It was definitely the best, affordable option , and we’d highly recommend it.

Stone Coat Counter Tops. Search for this on RUclips. They are so beautiful. You will be surprised. They are epoxy counter tops that look like real stone. Last for years and are not pricey.
What surprises me is the noise from the road nearby. For some reason one expects a more quite surrounding. Lovely work though. I envy your design and building skills!
I can see where Terry is coming from now with those black border tiles. They would tie in with the black pillars on the units. However...it is YOUR kitchen Tracy not Terry's. If you're not convinced don't give in to him..LOL. Ref worktops...you could go for natural wood mainly but then get Tony to inset some marble/stone sections where it will take the most punishment. However don't forget anything hard will play merry wotsits with your knives when chopping.

You asked about what to use as a finish? Use what here in the US is known as spar varnish. It is a varnish that is used on boats to finish and waterproof all at the same time. I've used it on floors to both waterproof and finish them. It has proven to be a strong long-term finish. If it is possible find the oil-based version. In my case, it has been down 18 years and counting. All the while holding up quite well.
I know there must be a reason we don’t see the entire kitchen-it’s frustrating not seeing what’s been done. I think black marble/slate or as the other suggested Formica. I still have Formica in my lake house and it was built in the 50’s. Looks as good as new. It’s just incredible what you have done with this house. I was so amazed by the beginnings and now near the end it is just fantastic!!

So excited to see the finish. Use butcher block in the counters, there is a finishing oil you rub on it. You can use a piece of slate next to the stove to put hot stuff down. Also a good idea is a piece of marble maybe 24x24, 2 feet by 2 feet, for rolling dough and making pastry dough. I love this kitchen and sending hugs to all. ❤❤❤

I think wood on a worksurface ends up looking shabby with inevitable cuts from knives and fluids. I like a good laminate surface or stone, if it’s in the budget. It’s easy to clean and looks good for a long time. If I were you, I would get a black surface to match the black accents on your cupboards. It would make your wooden cabinets stand out more. But it’s not my kitchen, it’s yours, so go with whatever you want. 😃
Don't get a wood worktop I have just had one in my kitchen and I wish I hadn't got it. I am continually wiping away water, and I still seem to have missed some and it stains black.
Yacht varnish for wooden worktop. Or Danish Oil. Use Worktop cutting board. I’d go with back marble too. Or black marble with a fleck of green as in your walls.
There are a lot of different clear or colored boat paints. We used a three layer think clear boat paint for our wooden tops. It lasted for over twenty years.
Deep drawers are great for storing all your saucepans, casserole dishes etc. Better than trying to get them out of cupboards. Looking good - mammoth effort xx

Use marble or polished stone on one unit - ideal for meal prep and it doesn’t have to be for the whole kitchen. Butcher block is lovely with its contrasting shades but it may be a) too busy on top of quite elaborate wooden kitchen you have and b) while you can protect it from water with food grade sealant, it will mark if chopped directly on it. It’s expensive too. You’ll probably find good composite wooden worktops already sealed in retailers there ( check IKEA to see what they have). You might go for a contrasting colour to the units themselves.

A dark stone may complement the cabinets but may look too dark in combo with floors. Maybe just by cooktop/ range as it will withstand heat & hot pots. Butcher block would look great but pricey. Check IKEA wood tops, usually budget friendly. Any good food grade sealant will protect from water spots. Always check Emmaus & Brocantes! Used cabinets with good tops, keep tops & use cabinets for workshop/potting shed later with cheap formica tops added. Creativity is your motto!

I had butcher block in a previous kitchen. It is not ideal around the sink and you need to use a cutting board to cut or you will leave scars on the wood counter. It needs to be treated with a special wood oil periodically.
Wow! I would suggest you have heat impervious surfaces close to the cooker. The number of times I have put a hot pot down on stainless steel in a hurry!. We also have some slate tops breaks up the wood

Osmo. We have rustic oak full stave worktops round the outside (granite on the island). Three coats of satin Osmo between light sanding and they are solid.
Every time I see the kitchen, I think how much it looks like a library. You really found a treasure with so many parts that can be moved about. We've done it before and it is so satisfying!
I would not recommend a wooden worktop. I used a Woca worktop oil which is food safe, easy to apply - wipe on wipe off, sand with 400grit sandpaper when wet to give a super smooth slightly satin finish. Looked beautiful but certain things do mark it and I have to resend and finish every 3 years. I have granite on the rest of the units- trouble free. I am thinking of replacing the wooden worktop with a stone product and I was looking at Cesar stone as someone mentioned as a friend has it and it looks good and wears well. I would seriously only use wood on non working areas. Love your kitchen, it is already looking beautiful. Wasn't sure about the colour of the walls but love it now the units are in.
just remember what ever your choice ..... you need a color and texture that still allows you to see mouse droppings in a second ..... .... from experience ..... where I couldn't even see the mouse !!!!!!!!!!
Had solid beech worktops in my last 2 kitchens: the only way to protect them is constant vigilance from scratches, stains & heat damage; making sure any liquid spills are wiped off & dried immediately, especially around the sink & drainer; and regular oiling with nourishing oil (I found Osmo to be the best brand). Kept both worktops looking almost brand new for 20+ years!

I love what you've done with your cottage kitchen so far! I would, however, not recommend wood counter-tops as you have just the right amount of wood now. I'd put stone or something that looks more like stone. Also, are you putting a table and chairs in the centre? If so, I think a white-painted wood table (very French!) would be a great compliment to both your wood cabinets and the lovely green paint! Keep up the good work!!
I am in the USA so not sure if you can get the product I used on my wood counters but it was marine varnish. The marine varnish was designed to be used on wood boats. I know not what you would think to use in a kitchen but it was wonderful! My counters were beautiful and I never had an issue with water marks even around the sink. I was always careful to use cutting boards, wipe up any spills, and the area around the sink I made sure was properly sealed and dry. I hope this helps you.

I have a hickory wood island top and I oiled it with a food grade linseed mixed with a color. I ordered it from Milk Paint in the US.

I would recommend hard stone countertops. They're almost indestructable. Covered with a coating, easy to clean and beautiful for decades.

Boiled linseed oil/ turpentine 50/ 50 is great natural wood sealer. Rub it in with wire wool and buff it up after an hour. Do it twice.

Oak work tops with Danish oil on them, you can always lightly sand them and re oil them if you ever get a mark on them
Look up cement oounter tops. They turn out beautiful and wear n tear is good. They also look rustic.
I see alot of cement counters on the american restoration shows. 😊❤

We bought solid oak work tops from brico depot and oil them. I have trivets for hot pots
I had butcher block in a previous kitchen. It is not ideal around the sink and you need to use a cutting board to cut or you will leave scars on the wood counter. It needs to be treated with a special wood oil periodically.

Wow! I would suggest you have heat impervious surfaces close to the cooker. The number of times I have put a hot pot down on stainless steel in a hurry!. We also have some slate tops breaks up the wood

I always use the cut out from the sink as my chopping board .It is the same as the bench top .

Osmo. We have rustic oak full stave worktops round the outside (granite on the island). Three coats of satin Osmo between light sanding and they are solid.

Every time I see the kitchen, I think how much it looks like a library. You really found a treasure with so many parts that can be moved about. We've done it before and it is so satisfying!
I would not recommend a wooden worktop. I used a Woca worktop oil which is food safe, easy to apply - wipe on wipe off, sand with 400grit sandpaper when wet to give a super smooth slightly satin finish. Looked beautiful but certain things do mark it and I have to resend and finish every 3 years. I have granite on the rest of the units- trouble free. I am thinking of replacing the wooden worktop with a stone product and I was looking at Cesar stone as someone mentioned as a friend has it and it looks good and wears well. I would seriously only use wood on non working areas. Love your kitchen, it is already looking beautiful. Wasn't sure about the colour of the walls but love it now the units are in.

I have a few friends with wood tops and they just use mineral oil or linseed oil to polish it up periodically
just remember what ever your choice ..... you need a color and texture that still allows you to see mouse droppings in a second ..... .... from experience ..... where I couldn't even see the mouse !!!!!!!!!!
Waterlox is a sealer used on butcher block/wooden countertops.

Had solid beech worktops in my last 2 kitchens: the only way to protect them is constant vigilance from scratches, stains & heat damage; making sure any liquid spills are wiped off & dried immediately, especially around the sink & drainer; and regular oiling with nourishing oil (I found Osmo to be the best brand). Kept both worktops looking almost brand new for 20+ years!

I used laminate countertop, lasts forever. The kitchen looks great! The cabinets belong there, nice against the green.
I have ikea solid oak worktops, i used an OSMO worktop oil its excellent and very easy to use. You can re coat as necessary without sanding ...
I love what you've done with your cottage kitchen so far! I would, however, not recommend wood counter-tops as you have just the right amount of wood now. I'd put stone or something that looks more like stone. Also, are you putting a table and chairs in the centre? If so, I think a white-painted wood table (very French!) would be a great compliment to both your wood cabinets and the lovely green paint! Keep up the good work!!

I am in the USA so not sure if you can get the product I used on my wood counters but it was marine varnish. The marine varnish was designed to be used on wood boats. I know not what you would think to use in a kitchen but it was wonderful! My counters were beautiful and I never had an issue with water marks even around the sink. I was always careful to use cutting boards, wipe up any spills, and the area around the sink I made sure was properly sealed and dry. I hope this helps you.

Finca Life just did a few videos of their self build kitchen with wood countertops. They used natural linseed oil and they came out beautifully!
