You should do an endurance race, you could only enter build mode in the pits. So you have to adjust while racing.
I like where you're going with that!
This is a cool idea
maybe only a couple of changes allowed per lap as well
First race, Yzuei: penalty for causing 2 accidents shown below 5:22 and 5:32 also for taking shortcuts leaving the track shown below with an approximate total of 2.5 seconds 5:54 and 6:43 according to the FIA it would be penalized between 15 to 30 seconds with a possible disqualification
ScrapMan: he will receive a warning when taking Yzuei off the track as shown below 7:34
Second race, Scrapman made contact with Yzuei causing him to lose control and causing him to crash and then 10:21 he will receive a warning since it was not his fault, Yzuei will receive a warning for going off the track in order to catch up with the other runners as shown next 10:44 and you will receive a 3.55 second penalty for taking a shortcut as shown here 11:10 and 11:24 and 11:26
Third race Kan: caused a serious accident by crashing into Yzuei as shown below 15:07 will be disqualified from the race, Yzuei: had a small contact with ScrapMan forcing him to leave the track as shown below 15:27 and also for taking a shortcut as shown in these fragments 16:07 and 16:12 and 16:16 you will be penalized with 6.00 seconds
Fourth race ScrapMan: caused an accident by crashing into Yzuei and taking advantage as shown below 19:07 will receive a penalty of 4.89 seconds Yzuei: left the track to take a shortcut as shown below 19:52 will be penalized with 3.42 seconds
Fifth race Kan: collided with ProfnCognito causing a serious accident as shown below 23:03 will be disqualified Yzuei: took a shortcut as shown below 23:59 will be penalized with 2.5 seconds

That sounds like it'd be fun, but I don't know how multiplayer will treat that many "creations" at once...

The reason the thrusters made you all spin out is because they produced a thrust force above the back wheels. This pitched your cars forward and took weight off the back tires losing grip. Therefore you spin out. A way to fix this would be to put thrusters at or below the center axis of your wheels. This will push the rear tires down and pitch the front up causing under steer. Or it will cause nothing to happen if it is centered and the car will drive normally all the way through.
Day 2 of asking:
You should do a star wars themed game. Have the razor crest be carrying something that you have to get from one planet to the next with starships protecting and attacking the each other. The job of the attackers is they have to destroy the razor crest before it gets its cargo to another planet. Like the same thing you did with planes. Just an idea that I thought of.
In the firs race you had way more downforce on the front than rear, its bettter to build the supercar wing, it just generates more downforce( if you had more balanced downforce, you wouldnt have that many problems with oversteer)

Idea for a video, relay race style. Play on the grand prix island one person does a lap then drives into the pits gets out and the other person gets in and keeps going, maybe no repairs to make it interesting? or do some evolution stuff. Idk I just thought it would be cool
I kinda low key hope they do the reverse track by doing something similar with evolution but they each start (but involving the fans, everyone goes to the workshop to download a creation with 9 power cores)

Quick flex lol I work with F1 and vintage F1 cars. I find aligning your downforce and center of mass helps with over and understeering.
